What should I make with sweet potatoes...Ideas please!?!
ps: Oh I also have quite a bit of squash that I oven baked in foil with a bit of salt, pepper and a tiny bit of olive oil from yesterday...should I mash and mix them with the yams and canellini? chunky type soup with a few herbs?maybe?...haha..ok obviously I need ideas so shoot...thanks much!
Answers: I just boiled 3 meduim sized sweet potatoes/yams and dont know what to do with them to make a good, non bland meal. I don't want anything necessarily sweet(like the usual add cinnamon and brown sugar..etc). I thought about making a soup but what herbs and/or spices would blend well do you think? I have plenty in assortment so any suggestions would be great! I also have cannellini beans and well as kidney beans right now. I just want to make a healthy lunch but nothing boring or regular. It's just for my little brother and I...maybe some for later based on how much I have at hand..

Since you've already cooked them, they'd probably be kind of mushy to make soup with. I love this recipe from Food Network. You can use less adobo sauce if you don't want them as spicy, but I think it's a great non-sweet flavor. Serve it with some ham steak slices and a salad.
Chipotle Smashed Sweet Potatoes Recipe courtesy Alton Brown
2 large sweet potatoes, peeled and cubed
2 tablespoons unsalted butter
1 whole canned chipotle pepper in adobo sauce, chopped
1 teaspoon adobo sauce from can of peppers
1/2 teaspoon salt
Put cubed potatoes into steamer basket and place steamer into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Serve immediately.
Since they're already cooked, you can just heat them through and then mash. It would proabably be good if you added mashed squash, too.
Eat them like that. Bake them in a pie. Slice them and fry them. They will be great just about any way you fix them.
For the yams: Mash them, add an egg, and shape into patties. Fry in oil until golden on both sides. Sprinkle generously with: garlic powder, salt, coriander, paprika and cayenne. This is Cajun yams. Don't leave any out, they all make magic when together!!!
I usually make this recipe by slicing the raw yams and cooking them in a pan both sides until done, then sprinkling the spices on them. It is my favorite way to make yams.
