i'm from hawaii and bentos are sold in all the drive inns. the rice is the short grain type,. in hawaii we have hinode or calrose. the bento you can use a tupperware container or something like that . put rice in bottom one to two inch layer. on top of that put teriyaki, fried chicken, spam, hotdog, fried egg. butterfish, mahi mahi, kimchee, takuan, dikon,ume, any of these or all of them can!! if you got sprinkle fudo kaki on the rice and maybe some soy sauce on the side and your all set. bon appetite.

Chicken Teriaki is good for the main protein. Just marinate skinless and boneless chicken thighs in teriaki sauce and broil for about 5 minutes per side. Slice into strips and serve over some shredded cabbage with a sprinkle of toasted sesame seeds. Another section could have a little green salad made with iceberg lettuce, some shredded carrot and a slice of tomato. I find the best substitute I know for the Japanese dressing is French Dressing with a bit of toasted sesame oil added. Sort grain rice is a necessity, as is a quartered navel orange. That's the basic bento.

For additional items, you might buy some premade sushi, or get really ambitious and make some tempura. Have fun!
