How do you make a good pepper sauce?!


Question: Blob of butter in a pan
fry off crushed peppercorns (egg cup full)
add beef stock/gravy (enough 4 how many people)
splash red wine/ brandy
stir in cream or alternative

Reduce some good stock to half its original volume, by boiling it rapidly for about ten minutes. Add a splash of cognac.

Crack some peppercorns and throw them in. Then add a spoonful of creme fraiche. Stir and warm through.

Bell Pepper Sauce

1 Jar (7-ounce) roasted red
-bell peppers; drained
1 cn (6-ounce) tomato paste
1/4 c Dijon mustard
1/4 c Red wine vinegar
2 tb Brown sugar
2 tb Olive oil
1 Garlic clove; crushed
1 ts Worcestershire sauce
1/2 ts Hot sauce

Instructions:
Process all ingredients in an electric blender until smooth, stopping once
to scrape down sides. Makes 1 3/4 cups.
