Question: I'm cooking for my boyfriend and I tonight, and I need something quick and simple to fix. What are some suggestions? Something healthy and, nothing with too much meat. He used to be a vegetarian, he is just starting to eat meat again.

casserole (veggie/chicken) or pasta (spaghetti and meatballs or even fettacine alfredo) you don't have to have a lot of meat in it, homemade pizzas, salads

BRAISED LAMB SHANKS
4 shanks
Flour
Salt and pepper
1/4 tsp. thyme
1/2 tsp. rosemary
1 c. diced carrots
1 c. diced potatoes
1/4 c. diced celery
1 med. onion, chopped
Dredge shanks in flour. Brown well in hot fat in large skillet. Add seasoning and 2 cups hot water. Simmer, covered 1 1/2 hours. Add vegetables. Cook for 30 minutes longer.


BROCCOLI OR CAULIFLOWER AND CHEESE.
1 pkg. frozen cauliflower or broccoli, or fresh.
1 can cream of mushroom soup, or some other soup.
1/4 c. grated sharp cheese

Cook the broccoli or cauliflower according to the directions on the package. Place in lightly greased casserole. Pour over mixture of cheese and soup. Bake in 180C (350F) degree oven for 15 minutes or until cheese has melted.

fish fillet chips and salad
get some good fish
coat in flour, then egg and then breadcrumbs mixed with parmesan cheese
refrig for a short while
shallow fry in olive oil
get some good froz chips
and whatever salad ingred you like mix in bowl
and at last minute coat with little olive oil salt and pepper
nice bread loaf and butter
and drinks of course

do a salmon stir fry, it's quick and easy.

go to the grocery store, get some of those pre-boxed salmon things, lemon if you prefer, hwihc is what i use and it rocks. get some frozen or fresh vegetables and anything else you want, and rice. cook the rice first, put the fish in the oven, and cook it along with the vegetables, follow directions on the boxes, chop up fish, mix up and serve. :] yummy!

How about a nice stirfry? Take a couple of boneless and skinless chicken breasts or thighs and marinate them in a mixture of soy sauce, brown sugar, ginger, and rice wine vinegar for about an hour or more. For your stirfry, plan on having a red bell pepper, bean sprouts, mushrooms, chopped celery, carrots, and cauliflower or broccolli. If you have sesame oil, use a little sparingly in your stirfry for added flavor. Organic brown or jasmine rice is a nice accompaniement to a stir fry, as are vegetarian spring rolls or potstickers.

(add what you want in your omellette, cheese,tomatoes,green peppers, mushroom)

wash and dice up into wedges 2-3potatoes
add a bit of oil, toss in a bowl
sprinkle some chilli powder ontop and toss around in bowl to coat potatoe wedges

bake 425F for 15min turn over and bake another 10min*
add canned veggies

I always find pasta really quick, easy and you can put whatever you want in it.
I started by frying some onions, then add some diced courgette, peppers, mushrooms, sweetcorn, then a tin of chopped tomatoes. Chop up some cooked ham or chicken. I like to add some herbs, anything you like. Cook your pasta, drain and stir into sauce. Serve on plates or in bowls and grate some cheese over. You could also serve with garlic bread.
