How can i make sure my cookies come out crunchy-not soft?!

I would use the instructions for the cake like brownies, add whatever you like to the batter (nuts, chocolate chips), spoon on the cookie sheet and watch them carefully to see how long it takes to cook them . It won't take as long as the brownies take since they are in individual servings instead of a cake pan. It will depend on your oven. I would cook them on 350.

Cookies=soft
Biscuits= Crunchy

Either cook them for a couple of minutes more for all around crispiness (but keep checking them so they don't burn) or turn up the heat for outer crispiness and inner softness.

Fry them. Seriously, a fried cookie is crunchy on the outside and chewy in the middle.

cooking for that little bit longer will make the crunchy

overcook slightly but not so much that they burn

Try baking them a littlle longer with lower heat.

Add coconut.
