Pasta with Roasted Bell Peppers and Basil

2 cups chopped onion
? teaspoon crushed fennel seeds
2 cloves garlic, minced
1 (14 ? ounce) can whole tomatoes, un-drained and chopped
3 pounds (6 large) bell peppers, roasted & peeled (red & yellow work the best)
? tsp salt
? tsp freshly ground pepper
? cup thinly sliced fresh basil
? cup fresh ground Parmesan cheese (or more to taste)

In case you don’t know how to roast bell peppers:

? Halve, seed and remove the membranes and stems from the bell peppers
? Flatten, skin side up, onto a vegetable sprayed foil on a cookie sheet
? Place under broiler for 10-15 minutes, watching very closely
? When skin is mostly black, remove to a paper bag and refrigerate
? After cooling 15 minutes or so, remove and discard the blackened skin

The potato salad recipe my mom taught me. I love making it, even though it takes me like 3-4 hours, i don't mind it because while I'm making it, I just know that everyone that eats it is gonna absolutely love it.

Honey glazed chicken or my lasagne.

My favorite recipe to make is chocolate chip cookies.

Mike's Ginger Snaps
I make them chewy, not crunchy. It uses 3x as much ginger as cinnamon, which is the secret to making them great.

Simple, tasty and healthy, my favortie recipe: fried meat steak with peper and little salt + steamed broccoli sauteed in the meat's gravy and some butter + peper + salt

Enchiladas from scratch, along with refried beans originating from dried pinto beans, and spanish rice used by sauteing my own homemade salsa as the base seasoning. What is also fun is getting those little tostito scoop chips and filling with refried beans and cheese & jalapeno and baking those in the oven as appetizers. I am SO hungry now.

Probably my Great Grandma's Brownie recipe. I learned when I was so young and I am suprised that I still remember it!

There's a great Pad-Thai recepie that I got from Food Network.
My Fiancee LOOOOVES it.

I'm known for my oustanding chocolate chip cookies and perfectly fudgy brownies with chocolate-peanut butter frosting. I love to make meatballs (for meatballs subs) and black bean chicken enchiladas.
