Green Stuffed Pepper
1 pound ground beef
1/2 cup uncooked long grain white rice
1 cup water
6 green bell peppers
2 (8 ounce) cans tomato sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
salt and pepper to taste
1 teaspoon Italian seasoning
Preheat oven to 350 degrees F (175 degrees C).
Place the rice and water in a saucepan, and bring to a boil. Reduce heat, cover, and cook 20 minutes. In a skillet over medium heat, cook the beef until evenly browned. Remove and discard the tops, seeds, and membranes of the bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. (Slice the bottoms of the peppers if necessary so that they will stand upright.) In a bowl, mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers. Bake 1 hour in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender.


Beef Lasagna Pie

4 ounces wide egg noodle pasta
1 tablespoon olive or vegetable oil
1/2 pound lean ground beef
1 small onion, chopped
1 cup thinly sliced mushrooms
1/2 cup thinly sliced green onions
2 cloves garlic, crushed
1 teaspoon crushed dried oregano
1 teaspoon crushed dried basil
1/2 teaspoon salt
Ground black pepper to taste
1/2 teaspoon crushed dried thyme
1 (15-ounce) can tomato sauce
1/2 cup cottage cheese
1/4 cup ricotta cheese
1/4 cup shredded mozzarella cheese
Cook pasta according to package directions; rinse with cold water and drain well. Layer noodles n the bottom of a 9-inch pie pan that's been coated with vegetable cooking spray and set aside. Preheat oven to 350°F (175°C). Heat oil in a large skillet over medium-high heat. Sauté beef until browned, about 5 minutes. Drain off excess fat and add onion, mushroom, green onions, garlic, oregano, basil, thyme, salt and pepper. Cook until vegetables are tender, about 4 minutes. Stir in tomato sauce, salt and pepper and mix well. .
Spread cottage cheese and ricotta evenly over the pasta. Pour the tomato sauce over top and sprinkle the mozzarella cheese over the casserole. Bake uncovered for 20 minutes, or until cheese is melted and sauce is hot.


Crazy Cheeseburger Pie

1 pound ground beef
1 cup chopped onion
1/2 teaspoon salt
1 cup grated cheddar cheese
1/2 cup baking mix
1 cup milk
2 Large Chino Valley fresh eggs
Preheat oven to 400°F. Grease a 9-inch pie plate. Brown beef and onion in skillet. Drain. Stir in salt. Spread ground beef mixture in pie plate and sprinkle with cheese. Whisk together baking mix, milk and eggs in bowl until blended. Pour this over beef. Bake for 25 minutes. Let cool.


Pasta Pizza
5 ounces corkscrew macaroni
1 large egg, beaten
1/4 cup milk
2 tablespoons freshly grated Parmesan cheese
8 ounces ground beef
1 small onion, chopped
1 garlic clove, finely minced
1 (14 1/2-ounce) can Italian-style stewed tomatoes
1 cup green and/or yellow bell pepper, cut into 2-inch strips
1/2 teaspoon dried Italian seasoning, crushed
1 (4 1/2-ounce) can sliced mushrooms, drained
1/4 teaspoon crushed red pepper
1 cup shredded mozzarella cheese (4 ounces)
Cook pasta according to package directions, preferably al dente (firm to the bite). Drain; rinse with cold water and drain again. For pasta crust, in a large mixing bowl combine egg, milk and Parmesan cheese. Stir in pasta. Spread pasta mixture evenly onto a greased 12-inch pizza pan. Bake in a 350*F (175*C) oven for 20 minutes. Meanwhile, in a large skillet cook ground beef, onion and garlic until meat is brown. Drain fat. Add undrained tomatoes (breaking up large pieces of tomato), pepper strips and Italian seasoning to meat mixture. Bring to boiling; reduce heat. simmer, uncovered, for 10 to 12 minutes or until pepper strips are crisp-tender and most of the liquid is evaporated, stirring occasionally. Stir in mushrooms and crushed red pepper. Spoon meat mixture over pasta crust. Sprinkle with mozzarella cheese. Bake for 10 to 12 minutes more or until heat through and cheese is melted. To serve, cut into wedges.


Beef & Vegetable Fried Rice
1 pound ground beef
2 cloves garlic, minced
1 teaspoon grated fresh ginger or 1/4 teaspoon ground ginger
1 red bell pepper, cut into 1/2-inch pieces
1 (8-ounce) package frozen sugar snap peas (we recommend Bird's Eye Foods Sugar Snap Peas)
3 cups cold cooked rice
3 tablespoons soy sauce
2 teaspoons dark sesame oil
1/4 cup thinly sliced green onions
Brown ground beef with garlic and ginger in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking beef up into 3/4-inch crumbles. Remove beef with slotted spoon. Pour off drippings. Heat 2 tablespoons water in same skillet over medium-high heat until hot. Add bell pepper and sugar snap peas; cook 3 minutes or until pepper is crisp-tender, stirring occasionally. Stir in rice, soy sauce and sesame oil. Return beef to skillet; heat through. Stir in green onions.

how about different casseroles, mexican food -tacos, enchiladas etc. you can do a soup with ground meat, and spaghetti noodles in a beef or tomato broth. really the list goes on. good luck.

Mince mix for both:
fry mince meat with salt, pepper, a pinch of cumin, a finely chopped onion, crushed garlic, and finish off with a chopped tomato- if you like you can add some sultanas.
The mix will be quite dry. Leave this to cool for a while, and for empanadas take little squares of pastry, put on 1/2 olive, 1/8 boiled egg and a spoonful of mince mixture. Fold over pastry and close edges with a fork for a nice pattern.
Bake in a hot oven till golden and serve, maybe with some fresh guacamole or tomato salsa.
