When spit roasting pork on a BBQ, what is the best way and correct temperature to make the crackling crunchy?!

Question: Some people have told me to cook it on very high heat for the 1st half an hour.

Answers: Some people have told me to cook it on very high heat for the 1st half an hour.

The way I do a pork roast on the BBQ is place a pan of water under the spitted roast. that is only to keep the fat from flaring up, but has the bonus effect of helping the roast cook in its own steam.
A thermometer is definitely mandatory, as when it registers that the roast is done, it might still appear "rare" , but , in fact is quite well done, and is one of the best roast Porks I have ever served.
Just remember, while cooking, ensure that there is always water in the drip pan, or the pan will burn out.

i don't know but invite me!!!

I thought cracklings were fried?

If you put it on high for the first hour, its called searing.
It is meant to seal your juices, you probably know this.
Use dry spices prior to roasting.
Turn up the heat for the last 45 minutes.
Sprinkle sea salt on the skin, That will absorb any moister, and make it crackle.
continue to check the skin for wrinkling if it is NOT wrinking, use cold water and pour it over the skin and it help the skin to shrivel.
