ok well what i do and it turns out perfect !

i weigh the eggs and what ever they weigh everything else weighs the same [ butter , flour , sugar , any other ingridence ]

honestly it isn't always the cake that makes the cake ...use a box of cake mix like spice cake then when it is still warm not hot ...add the icing to the middle mostly as it melts and runs down it makes it so much better than the cold smeared icing on it ...did this to a wedding cake and every one was asking for the recipe... was too funny but it was great

4 oz Self raising flour
4 oz Soft Butter or Margarine
4 oz Caster Sugar
2 eggs
1 tblsp Milk (any kind)

Mix in a bowl for 5-10 mins, place in oven at 200C (I think it's Gas Mark 7, but not sure), cook for 30 mins, or until golden.

Add 2 tblsp of cocoa or drinking chocolate as a variation

Go to allrecipes.com for the Crazy Cake recipe. I'm too lazy today to type it all out for you. It's a great, moist, easy, cheap chocolate cake, you'll love it.

A simple sponge cake:

3 oz marg
3 oz sugar Mix these two together first

Add 3 eggs slowly and mix them in.
Then add the flour a bit at a time, using a mixer.
Then add 2 oz of cocoa and mix.
Put into two greased tins and cook for 15 minutes or so. If, when poked with a knife it comes out dry then you have accomplished your brilliant cake - well done!!

Do you have scales with oz?

6oz Margerine
6oz Caster Sugar
6oz Self Raising Flour (if chocolate take a a few teaspoons out and substitute with cocoa powder)
3 eggs

Light the oven to 180 degrees.
Mix the ingrediends until light and fluffy.
Put the mixture into the cake tins (greased) or cases.
Bake for about 15-20 minutes.

A simple Chocolate Cake recipe.

1/2 cup cold coffee, rum, brandy or water
4 ounces (1 stick) butter
6 eggs, separated
1/3 cup granulated sugar

Preheat oven to 350 degrees F.
Butter or spray 6 ramekins or 1 (6-inch) cake pan.

In a double boiler melt chocolate, liquid, and butter. Beat egg yolks until light and fluffy. Add melted chocolate mixture. In bowl of mixer beat egg whites and sugar to stiff peak stage. Fold chocolate mixture into meringue. Pour into ramekins or cake pan and bake in oven for about 20 minutes. Remove from oven and serve immediately.

Get any flavor box cake you like and add instant pudding mix to it. And also I add a chopped up apple to cake mix. It makes it moist. Or applesauce! I add apple to all my cakes. You can add vanilla extract to the cake mix too. YUMMY!!!!
Or just make 2 boxes of brownie mix and add mini chocolate chips and chopped walnuts. Put in 13x9 pan and it makes it thicker.
