1 head Broccoli
1 head Cauliflower
(Including Stems chopped and a few leaves)

Boil in salted water for 6 minutes or until soft. Drain.

In a frypan, combine:
6 cloves garlic, sliced
3 anchovies
3 hot red chillies (not optional)
some fresh lemon (or ordinary) thyme leaves
some good olive oil

Cook, add drained vegetables and toss.

Cover and cook on medium heat until mushy.

Mush up vegetables and cool by spreading out on a tray.

Combine:
1 tub Crème Fraiche and generous amount of Grated Parmesan Cheese
Add Black Pepper to taste

To a bottle of passata or sugo (Italian tomato sauce), add some salt and a good slosh of red wine vinegar.

Place a good (say 1-2cm) layer of passata in the bottom of a baking dish.

Put cooled veg into a plastic bag, cut off end and pipe filling into cannelloni tubes.

Place filled tubes on passata in dish.

Top with crème fraiche mixture.

Sprinkle over more grated parmesan and scatter over a few good blobs of mozzarella cheese (about 1/2 a mozzarella ball).

Cook at 190C for 30 minutes or until golden.
