Am making a pork roast today for Sunday dinner. Can someone give me good recipe for a thin gravy?!
Answers: Have made thick gravies before but would prefer something like an au jus?
Drippings from roasted pork roast or sautéed pork chops
3 tablespoons all-purpose flour
Pork Stock, broth, and/or dry red or white wine or sherry
Remove pork from roasting pan or skillet; keep warm.
Pour pan drippings into a large glass measure. Let stand until fat floats to top.
Skim fat from drippings; reserve 3 tablespoons fat.
Return reserved fat to pan; sprinkle with flour.
Cook and stir over medium heat for 1 to 2 minutes, scraping browned bits free from pan.
Add enough Pork Stock, broth, and/or wine or sherry to drippings to make 2 cups. Return to pan.
Cook and stir until smooth and thickened.
Serve with pork.
Serving Suggestions
Capture the rich essence of roasted or sautéed pork by using the flavorful meat juices and drippings left in the pan. If you don’t get enough fat from the roast or chops to make the gravy, add vegetable oil to make up the difference.

Take the pork from the pan and put the pan over a burner on the stove.
Pour in a cup of white wine or some low sodium chicken broth and turn the burner on med.
Use a whisk to scrape up all the brown bits off the bottom of the pan and the wine/broth is reduced by half. Remove from heat.
In a sauce pan, melt a pat of butter and a teaspoon of olive oil. Add a tablespoon of flour and whisk until it turns a light, golden brown.
Whisk in the liquid from the pan and stir until disolved and the sauce is thickened where you want it to be. If it is a tad too thick add another splash of broth or water.
Add either some sauteed mushrooms or a can of mushrooms (Drained) for some texture and flavor.

I always pour a beer over my roast and alittle oil or wine! It makes it very juicy and moist! I also take a Lipton soup packet(any flavor-my favorite is SAVORY HERB AND GARLIC) and mix it with hot water. Stir it in a coffea mug and then pour it over the roast.
