For eggplant vegetables, Don't peel it since the skin will keep it from
falling apart and the skin gives it a slight crunchiness and extra fiber. In Chinese and Japanese cooking you don't peel the eggplant.

No, you don't have to peel the eggplant. Just put it on the cookie sheet and it will turn out great. If you do decide to peel the eggplant then the best way to bake it is to cut it in long pieces. I have done it both ways and it always turns out great.

No, you don't have to peel it, but if you don't like the skin, then go ahead and peel it.

I find that eggplant peels are very tough and bitter. However, you can soak the eggplant slices in a slightly salted water before cooking and it will draw out the bitterness. While I admit the peel is very nutritious and has a lovely color..it is still tough and hard to digest for me.

On Good Eats Alton Brown took whole eggplants, poked them a few times with a knife, roasted (Or grilled them) took them off, cooled them until he could handle them, then wrapped them in Plastic Wrap to steam for a few min's before cutting off the stem side and squeezing the insides out like a tube of toothpaste.

No matter what the recipe says... Drain off as much of the liquid as possible... That should remove most of the bitterness... Also, try to choose Male Eggplants. Less bitter seeds. Ask your grocer to show you the diff... You look at the "Belly Button" of the eggplant...
