Apricot Honey Oat Bar Biscuits (cookies)


Ingredients



1-1/2 cups old-fashioned rolled oats (uncooked)

1/2 cup finely chopped dried apricots

1/2 cup honey

1/4 cup non-fat plain yogurt

2 large egg whites

2 tbsp. wheat germ

2 tbsp. flour

3 tbsp. margarine, melted

1/2 tsp. cinnamon

1/2 tsp. vanilla

1/4 tsp. salt



Directions
1. Preheat oven to 325 degreesF. Spray 8-inch square baking pan with non-stick cooking spray.
2. In large bowl, combine all ingredients; mix to blend.
3. Turn mixture out into prepared pan, smooth evenly.
4. Bake until centre is firm and edges are lightly browned, about 25 minutes.
5. Cool and cut into 2-inch squares.
(Makes about 8 servings)




Honey Cake

Ingredients

vegetable oil cooking spay (or simply use a brush)
3 cups unbleached flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 cups Sucanat or brown sugar
1 1/4 cups lite silken tofu (extra firm), drained
1 cup prune puree
3/4 cup liquid Fruitsource
1 Tbsp. grated orange zest
2 tsp. rose water
1/3 cup soymilk lite
1/2 cup walnut pieces


Directions
1. Preheat oven to 350°.
2. Spray a 9"x13" pan with cooking spray.
3. Combine flour with the next 5 ingredients in a large bowl.
4. Place tofu in food processor; blend until smooth.
5. Add prune puree, and blend.
6. Add Fruitsource, orange zest, and rose water; blend.
7. Add tofu mixture to dry ingredients alternately with the soymilk.
8. Fold in walnuts.
9. Pour into prepared pan.
10. Bake 45 minutes or until toothpick inserted in center comes out clean.
(Makes about 24 servings.)




Mrouziya (Honey Spiced Lamb)

Mrouziya is traditionally served during Eid al-Adha.
Ingredients

2 pounds lamp chunks
2 cups water
2 teaspoons Ras el Hanout (spice blend - including allspice, nutmeg, saffron, black pepper, cinnamon, cardamom, salt, turmeric, ginger)
1/4cup honey
1/4cup olive oil
1/2 cup whole blanched almonds, toasted
1/4 cup raisins


Directions
1. Heat oven to 345 degrees.
2. Coat the lamb with Ras el Hanout spice.
3. Place spiced lamb in a 5-quart pot with an appropriate lid.
4. To the pot, add the water, honey and olive oil
5. Bake in the oven for about 2 hours until the meat tenderises.
6. Remove the meat from the pot and keep warm. Remove extra oil.
7. To the pot, add the raisins. Boil until the raisins are fully cooked and the stew has thickened.
8. Return the lamp to the stew. Bring back to boil for about 2 minutes.
9. Decorate with the toasted almonds.
10. Serve with warm bread, or with cooked Saffron rice, Raisins and Almonds.

Apple Snacksters with Honey & Peanut Butter
- Makes 4 servings -
3/4 cup chunky peanut butter
1/3 cup honey
4 large Granny Smith or Red Delicious apples, stems removed
4 small sprigs fresh mint, optional
Cold water
An adult to help with slicing the apples
In a small bowl, mix peanut butter and honey together until well blended. Set aside. Fill a large bowl with cold water and stir in lemon juice. Set aside. For each apple, choose a type of Snackster below and follow the steps. You might want to ask an adult to help cut up the apples.

To Make a Snackster Stacker
Use an apple corer to remove the center of the apple, making a hollow space from stem end through the bottom.
With a sharp knife, cut apple crosswise into 4 thick slices.
Dip apple slices in lemon water and gently pat dry with paper towels. Starting with the bottom piece, use a butter knife to spread the peanut butter mixture on the cut sides of each slice and gently press them together to reassemble the apple. To make a stem, top apple with a mint sprig.

To Make a Snackster Dipper
With a sharp knife, cut each apple in half from stem end to bottom. Cut each half into 4 to 6 wedges. With knife or melon ballet remove apple core from each wedge. Dip wedges in lemon water and gently pat dry with paper towels. Spoon the peanut butter mixture into a small bowl and surround with apple wedges for dipping.


Honey Cherry Granola Bars
1/3 cup pure honey
1/4 cup butter, melted
3 egg whites
1 teaspoon cinnamon
1/2 teaspoon almond flavoring
3 cups low-fat granola
1/2 cup almonds, coarsely chopped
3/4 cup dried cherries
Preheat oven to 350°F. Whisk together honey, butter, egg whites, cinnamon and almond flavoring. Stir in granola, almonds and cherries. Spoon granola mixture into 9-inch, nonstick (or well greased) square pan. Using a piece of wax paper, firmly press granola mixture in pan. Bake 20 to 25 minutes or until lightly browned. Remove pan from oven and place on a cooling rack. Cool completely; cut into bars.


Honey Lemon-Aid
3/4 cup honey
1 cup lemon juice
1 lemon, thinly sliced
1 quart carbonated water
Ice cubes
Mix honey and lemon juice together in a 1-quart juice container until honey dissolves. Add carbonated water and lemon slices. Refrigerate until cold. To serve, fill each glass with ice.

Table sugar is sucrose, a naturally-occurring sugar made up of one glucose molecule and one fructose molecule joined together. fructose seems sweeter to our taste buds, and honey has lots of fructose. You can use less honey than sugar in recipes for that reason.


Honey Crispies
1/2 cup powdered sugar
1/2 cup peanut butter
1/2 cup honey
1-1/2 cups crisp rice cereal
1/2 cup raisins
1/2 cup chocolate or multicolored sprinkles
Place a sheet of waxed paper on a cookie sheet so cookies won't stick. Combine powdered sugar, honey and peanut butter in a medium bowl. Stir until mixed well. Stir in cereal and raisins. Using hands, shape mixture into 1-inch balls. Roll balls in sprinkles and place on a cookie sheet. Refrigerate for 1 hour. Cookies should feel firm when touched. Serve right away or place in tightly covered container and store in refrigerator.


Whipped Honey Butter
1 cup (12 oz.) whipped honey or crème, softened if necessary
1/2 lb. (2 sticks) butter, softened
In a medium bowl, mix together honey and butter. Spoon into jars with tight-fitting lids. Store in refrigerator.

1 container (6 oz.) peach low-fat yogurt
1 Tbsp. honey
1/2 tsp. ground cinnamon
1/2 cup POST HONEY BUNCHES OF OATS Cereal

MIX yogurt, honey and cinnamon in small bowl.

ADD cereal; stir gently until well blended. Serve immediately. Or, cover and refrigerate until ready to serve.

SERVE as a dip with fruit skewers, sliced fresh fruit or HONEY MAID Honey Grahams.

This will sound awful but honey and cheese sandwiches I thought it was a wind up the first time someone made me one but they are absolutely delicious.

Honey is a fantastic glaze on a roast with rosemary/cinnamon garnish.

Honey is good with porridge, or with hot water, fresh lemon juice and ginger as a fruity tea, last sunday I made grilled peaches which involved mixing up honey and lemon, then drizzling it all over the halved peaches and grilling it for 5 minutes. Honey is also lovely in natural yogurt (especially greek yoghurt). It's good for you too!

It makes a very nice dressing for astingent greens like spianch or arugula. Simply, 1 part lemon juice, 1 part honey, and 2 parts oil. A liitle salt and pepper and you are in business.

Also, drizzle it over a good Greek yogurt with walnuts and dried fruit. Simply delicious.

I also love peanutbutter and honey toast.

And, if your bees aren't mistreated, you can give it to your near vegan friends.

You can substitute sugar for honey in almost any recipe according to Alton Brown.

Honey power granola

2 cups old fashioned rolled oats
3/4 cup sliced of slivered almonds
1/4 teaspoon salt
1/4 cup wheat bran (optional)
1/2 cup hulled sunflower or pumpkin seeds ( optional)
1/2 cup canola oil ( or any other mild flavored vegetable oil)
1/2 cup honey
1 1/4 cup raisins

preheat oven to 325 degrees F. stir oats, almonds, salt and wheat bran and sunflower or pumpkin seeds, if using together, in a large bowl. add oil and honey and stir until oat mixture is thoroughly moistened. spread oat mixture on a large baking sheet and bake stirring occasionally, until toasty and golden brown, 30 to 40 minutes remove baking sheet from he oven. pour granola into a lare bowl and stir in raisins. let cool completely. store in airtight containers approximately 6 cups.

your little sister might be to young to eat honey so you might want to check with your parents. good luck

HONEY ALMOND BRITTLE

2 cups sugar
1 cup honey
1 tablespoon butter
1 cup water
1/8 teaspoon salt
2 cups slivered blanched almonds

In a heavy bottom saucepan, stir together sugar, honey, salt and water. Stir until sugar has dissolved. Bring to a boil and continue to cook until mixture reaches 300°F on a candy thermometer (see Sugar Candy Chart).
Remove from heat and add butter and almonds, stirring only enough to mix them in.

Pour mixture out onto a well buttered or oiled marble slab or cookie sheet (with sides). Spread using a spatula or the back of a large spoon until mixture is very thin.

Well mixture is cold, break it up into irregular shaped pieces (a hammer helps). Store in a cool dry place in air-tight containers.


HONEY - PEANUT BUTTER BALLS

1 cup honey
1 cup peanut butter
1 cup non-fat dry milk
1 cup Rice Krispies Cereal
1 cup flaked coconut (optional)

Combine honey, peanut butter, non-fat dry milk, and cereal.
Spread coconut evenly on wax paper or plastic wrap. Shape dough into small balls and roll in coconut to coat.

Place balls on plastic wrap and refrigerate.

White Karo syrup may be used in place of the honey or substitute 1/2 honey and 1/2 Karo syrup.

Note: wax paper, parchment paper, plastic wrap or aluminum foil may be used interchangeably for this recipe.

AUSTRALIAN HONEY CAKE

2 eggs
1 cup sugar
3/4 cup oil
3/4 cup honey
1/2 tsp baking soda
1/2 tsp cloves
2 tbsp cocoa
1 cup self rising flour
1 cup flour
1 cup boiling water

VARIATIONS:

1/2 tsp mixed spices
1/2 tsp cinnamon

Preheat oven to 375 degrees F (190 degrees C). For convection oven, preheat to 350 degrees F. (180 degrees C.)
Mix eggs with sugar.

Add remaining ingredients in the following order: oil, honey, soda, cloves, cocoa and flour.

Lastly, add boiling water.

Bake for 1 to 1-1/4 hours.

After about 1/2 hour, lower heat to 350 degrees F. (180 deg. C.)

For last 10 to 15 minutes, lower heat to 325F (300F if using a convection).


NOTES:

It is a wonderfully aromatic and deliciously moist cake, and keeps very well stored in an air-tight cake tin.


HONEY ROASTED POPCORN

1/3 cup honey
1/4 butter
1/2 brown sugar
4 cups popcorn
1/2 tablespoon milk

Mix in a bowl the honey, butter, brown sugar, and milk. Add popcorn. Mix. Spread on a pan and bake at 375 for 10 min. Watch carefully! Enjoy!!

HONEY TAFFY

2 1/3 c. sugar
2 1/3 c. honey
1 1/2 c. water
1/4 tsp. salt
2 tsp. vanilla

If you plan for a taffy pull for an evening, cook it much earlier - if too early it can be warmed up.
Combine sugar, honey, water and salt. Cook rapidly to 280 degrees (medium crack). Stir in vanilla and pour into a buttered pan to cool enough to be handled. Then pull until light. Pull the last few pulls higher, draw out into a rope about 1/2 inch in diameter. While still pliable, quickly cut into 1/2 inch lengths. (Use kitchen shears with blades rubbed with softened butter). Wrap each piece in heavy waxed paper.

Makes 2-2 1/2 pound. Note: Do not stir candy while cooking.

We like to mix honey with peanut butter.

honey and mustard chicken.....for 4 people
mix in a bowl one teaspoon wholegrain mustard, three teaspoons honey, three tablespoons olive oil, dash of salt and pepper. mix well together, add either cubed chicken or 4 chicken breast, mix and coat chicken with sauce. cover bowl with cling film leave in fridge for at least 1 hour over night is best though. when ready either cook in wok, oven or on skewers under grill or on bbq.
sister will love mixing and putting on skewers (take care of any sharp points)
