Could I make flapjacks from rolled oats and honey?!

Flapjacks
3 oz Butter
2 oz Light brown sugar(soft)
2 tb Golden syrup
6 oz Rolled oats
Instructions:
Grease a shallow 7 in square cake tin. Melt the butter with the sugar and
syrup and pour on to the rolled oats. Mix well, turn the mixture into the
prepared tin and press down well. Bake in the oven at 350F for about 20
minutes, until golden brown. Cool slightly in the tin, mark into fingers
with a sharp knife and loosen round the edges. When firm, remove from the
tin, and cool on a wire rack, then break into fingers. The flapjacks may be
stored in an airtight container for up to a week.
honey might work instead of the maple syrup. worth a try!

If you mean by adding them to the batter, then yes. But I'm unsure as to how you could make flapjacks without flour. If you're adding the rolled oats to the batter, then make sure you have enough liquid. The honey can replace the sugar. I add oat bran &/or rolled oats all of the time to my flapjacks. The kids like them ok. They can be dry if I'm not careful.

Cooking time 10 to 30 mins
Ingredients
200g/7?oz unsalted butter
200g/7?oz demerara sugar
200g/7?oz honey
400g/14?oz porridge oats
50g/1?oz nuts, dried fruits or glacé ginger, chopped or desiccated coconut (optional)
You will also need a 20cm x 30cm (8in x 12in) cake tin, greased
Method
1. Put the butter, sugar and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved. Add the oats and nuts, fruit, ginger or coconut, if using, and mix well.
2. Transfer the oat mixture to the prepared cake tin and spread to about 2cm (?in) thick. Smooth the surface with the back of a spoon. Bake in a preheated oven at 180C/350F/Gas 4 for 15-20 minutes, until lightly golden around the edges, but still slightly soft in the middle. Let cool in the tin, then turn out and cut into squares.
