Giant Chocolate Chip Banana Muffins

Makes nine 3" muffins

3 C All purpose flour
1 C Sugar
4 Tsp baking powder
1 Tsp cinnamon
1 Tsp salt
2 C milk
1 C mashed ripe bananas (~3 bananas)
1/2 C butter, melted
2 eggs
1 C semi-sweet chocolate morsels
3/4 C nuts or 1 C raisins

Preheat oven to 400 F. In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. Make a well in center.

In a small bowl, combine milk, mashed bananas, butter and eggs. Add to well in flour mixture. Add semi-sweet morsels and 1/2 C nuts (or raisins); stir well until dry ingredients are just moistened. Spoon mixture into greased or paper lined muffin cups, filling each 3/4 full.

Sprinkle ~1 tsp nuts over each muffin. Bake at 400 F. for 18-20 minutes. Cool 5 minutes in pans then remove and cool on wire rack.

Recipe for Double Choc Chip Muffins:
2 eggs
1/2 cup oil (125ml)
1 cup milk (240ml)
1 tsp. vanilla
1 3/4 cups plain flour (240g)
1/2 cup sugar (85g)
1/4 cup cocoa (35g)
1 Tbsp. baking powder
1/2 tsp. salt
1/2 cup semi-sweet chocolate chips (85g)
Extra chocolate chips to sprinkle on top (if desired)

Preheat oven to 200 C and prepare muffin pan by greasing or fill with paper liners. A nonstick pan requires no greasing, although I like to just grease the bottoms. In large bowl mix well the eggs, oil, milk and vanilla. In smaller bowl mix well the flour, sugar, cocoa, baking powder, salt and chocolate chips. Combine wet and dry mixtures and fold together gently until just mixed. Spoon into prepared pan and sprinkle choc chips of top of each. Bake at 200C for 20 minutes. Remove from pan and cool on rack.
Nice sprinkled with extra chocolate chips on top of each muffin before baking.

Banana Chocolate Chip Muffins

Ingredients-
2 cups all-purpose flour
1/3 cup white sugar
2 tablespoons Dutch process cocoa powder
1 tablespoon baking powder
1 cup mashed bananas
2/3 cup canola oil
1 egg, beaten
1 cup semi-sweet chocolate chips


Preparation-
In a large bowl combine the flour, sugar, cocoa powder and baking powder.
In another bowl, blend the bananas, oil and egg together. Add to dry ingredients, mixing just until blended. Fold in the chocolate chips. Spoon the batter into a greased muffin pan, filling three-fourths full.
Bake in a preheated 425 degree F(220 degrees C) for 15 to 20 minutes. Remove the muffins to a wire rack to cool completely.

Basic muffin recipe with chocolate chips

Ingredients

115g butter at room temperature

70g caster sugar

2 eggs at room temperature

215g plain flour

1 teaspoon baking powder

125ml milk

170g plain chocolate chips

Preheat oven to 375F, 190C gas 5

Grease ten muffin cups, or use paper cases.

With an electric mixer, cream the butter until soft. Add both sugars and beat until light and fluffy. Beat in the eggs one at a time.

Sift together the flour and baking powder, twice.

Fold into the butter mixture, alternating with the milk.

Divide the mixture between the muffin cups.

Sprinkle chocolate chips on top of each muffin batter, then spoon over some more muffin batter to cover.

To ensure even baking - half fill any empty cups with water.

Bake until lightly coloured, - about 25 minutes. Let the muffins stand to cool for 5 minutes before turning the chocolate muffins out of the tin to cool further.

Choc--Double Chocolate Muffins

4 oz (1 stick) margarine or
Butter
3 oz 1 oz. squares, cut up, of
Unsweetened chocolate
1 c Sugar
1 Egg
2 ts Vanilla extract
1 ds Salt
2 c Flour
1 c Buttermilk
1 ts Baking soda
6 oz Semisweet chocolate chips
(1 cup)

Instructions:
1. Preheat oven to 400 deg. F. In a 2-quart glass bowl, combine butter
and unsweetened chocolate. Heat in microwave oven on High 2 to 2 1/2
minutes, until melted and smooth when stirred. Let cool to lukewarm. 2.
Stir in sugar, egg, vanilla, salt, and buttermilk, until thoroughly
blended. Mix together flour and baking soda and stir into chocolate
mixture just until combined. Stir in chocolate chips. 3. Spoon batter into
12 paper-lined 2 and 1/2 inch muffin cups, filling to top. 4. Bake 15 to 20
minutes, or until a cake tester inserted in center comes out clean. Let
muffins cool in pans 5 minutes, then transfer to racks to cool completely.
Serve warm or cool
