Grilled eggplant??!
Answers: Anyone know any good ways to do eggplant in the oven?? I'm thinking kinda plain with some olive oil and fresh garlic... need some advice!
If you cook eggplant in the oven, it really won't be grilled; it will be baked. I've grilled eggplant many ways, but the best I've found is with a George Forman (or similar) grill. Cut your slices lengthwise about 1/4 inch thick. You can even leave the skin on if you like. Brush both sides of the eggplant with olive oil. Dust each piece with garlic powder (not garlic salt), or rub with fresh minced garlic. Then lightly sprinkle with salt and pepper. Cook until eggplant is tender--about 3 to 4 minutes. Yum!
lightly drizzle or brush with olive oil and salt and pepper, then roast in oven or grill.

fried eggplant is good to.
1 large eggplant halved the long way and cut into thin, 1/8" slices
2 eggs beaten
1 cup seasoned bread crumbs
1 cup ricotta cheese -- I use skim milk ricotta
1/2 cup grated parmesan cheese plus 2 T. for topping
1/2 cup grated Monterey jack cheese plus 1/4 cup for topping
1/4 cup sharp cheddar cheese -- optional -- I used it more for color than anything else plus 1/4 cup for topping
1 T. chopped oregano
2 cups tomato sauce, canned or use Michael's Tomato Sauce
pinch of sugar
2 large garlic cloves, minced
1 T. olive oil
salt to taste
Wash the eggplant. Cut off the top and cut the eggplant in half the long way. Leave the skin on.
Use a very sharp knife or a mandolin -- very handy here -- to cut the eggplant into 1/8" slices. Salt the slices and lay them on a strainer for 20 to 30 minutes. Pat them dry with paper towels. Then dip in beaten eggs and then seasoned bread crumbs. Lay them on parchment paper or waxed paper as you coat each one.
Lightly oil a jelly roll pan or line it with parchment paper. Put slices of coated eggplant on pan and broil until brown, turn over and brown the other side. They take about 5 to 7 minutes per side.
Lay browned slides on wax or parchment paper. Mix cheeses, oregano and salt to taste in a bowl. Put a large spoonful of the cheese mixture on the edge of each eggplant slice and roll them up, seam side down.
If you're using canned tomato sauce, sauté' garlic in olive oil, add sauce and pinch of sugar. If you're using homemade sauce, you're good to go.
Spoon sauce into the bottom of baking pan. Lay eggplant on top of sauce. Top with the rest of sauce. Bake in preheated 350 degree oven for 20 minutes or until cheese starts to bubble. Mix cheese for topping and put on top. Return to oven until cheese melts. Enjoy!
Soak it first in salt water for about an hour. Then drain and place on a broiler pan. Sprinkle with fresh garlic and olive oil. Top with Parmesan cheese and grill. I like to serve my eggplant with Fresh Mozzarella and tomatoes. Enjoy.
Slice the eggplant into about 1/4 inch slices. I like to peel them first as the rind is rather tough. Soak the slices in salted water for about 15 minutes. Pat dry. Coat the eggplant slices with olive oil and some Italian bread crumbs. Place in a 350 dg. oven until just tender. You can it it just that way or place it into a nice casserole using Italian sauces or other sauce of your choice. There are many many recipes for eggplant. But remember to soak it first to get the bitterness out. Fried is good yes.. I love it that way.
lightly olive oil the egg plant coat with italian bread crumbs and garlic powder salt and pepper and bake in oven until done. YUM!!!
slice your egg plant ( prefer mine peeled) lengthwise .season well with s&p.
place in a baking dish that has been drizzled with Olive.
combine 1 cup bread crumb,1/2 cup parm cheese,1 tsp oregano,1/4 tsp garlic powder....drizzle with 3 tablespoons olive oil or butter....toss to combine.
sprinkle over eggplant...bake at 350 for 25 mins or until golden brown.
My friend and I grill everything on the BBQ.Their are many
ways to grill. Your ideas are good. You could put onions on
and sauces. We grill tomatoes,peppers,onions,eggplant and
mushrooms. So much more. Sometimes we soak the egg-
plant in an egg and water mix. Then we pat them in bread
crumbs. Shake off the excess. Cook until golden brown.
You might want to turn them over half way so the other side
also gets golden brown. We even grill whole garlic. YUM.
