How do I cook a sirloin steak?!


Question: The other half loves sirloin steak so I bought a really nice expensive one and as a treat I want to make it for his tea tonight - thing is I'm vegetarian and have never done it before in my life! I have the steak (obv). vegetable oil, a frying pan... how long does it take? Is there anything I need to know? He likes it well done.

I would use a medium high heat, season the meat well with salt and pepper and then fry for about 5-6 mins each side - but there's an easy guide here...

Just cook it on each side for about 8 minutes on a medium to high heat.

Should be fine. If you want to make sure just poke it with a knife and if the juice runs red cook it longer!

Marinate it for a couple of hours in the frig to tenderize it and then broil it.

Well, if he likes it well done, you dont have to spend alot of money on a nice cut of meat-shoe leather is similar to well done sirloin.

But, if you are going to pan fry the steak you will want it sizzling hot-med high.
A small amount of oil in the pan to prevent sticking.
I would fry it on one side for about 4 min, flip it, give it three more minutes and then make sure the oven is heated up, slide it in the oven and let it cook for about 10 min at 350 or so.
This is important to the steak, regardless of how you cook it.

let the juices redistribute.
take it out of the oven and cover it with tin foil for at least 10 min before serving.
it IS the difference between a dry chewy steak and a juicy tasty steak.
Salt and pepper the meat liberally before you cook.
It should be good.
You can tell how done meat is by pressing on the center-
if it is firm, it is well done, if it is a little squishy, it is pink or red.

I always grill mine under a hot grill. When it looks done just cut off a corner to check.

it would be nicer done in the oven in tin foil and check on it by using your fork to make sure it cooked and then put it in some gravy to tenderise it right through.....

Time depends on whether he likes it rare or well done.

DO NOT PUT IT IN A FRYING PAN WITH OIL!!! that is a No No!
Broil it or grill it on a grill.
Turn on the oven to broil.
Open the oven door and move the rack to the top. Put the steak on a broiler pan. Lightly salt and pepper the steak. put it in the oven. time for 10 minutes on both sides. depending on the thickness of the steak time may vary.
Do NOT use oil. You will rune the flavor of the meat not to mention you will have a mess of oil everywhere.

DON'T FRY IT! Grill it.
It doesn't take long so don't go away and leave it.
Spread a little butter on the side that is going under the grill first.
Cook for around 3/4 minutes.
You will see that the top goes brown, so flip it over and lightly butter the other side.
Put it back under the grill.
Check it after around 4 minutes and see if the top is brown.
You only want to lightly brown it or it will end up like a piece of leather.
Then check that the side of the steak is brown all the way through. If it is, then its well done.

If he likes it well done and providing you've got a decent steak you can:

Allow the steak to get to room temp by leaving it out for 10 mins prior to cooking. Drizzle some olive oil (if you have it) on the steak and then season with a little salt and plenty of crack black pepper. Then, get a frying pan and place it on the hob and allow it to get v.hot (don't put any oil in the pan). Once the pan is HOT place the steak in it and turn after a few minutes, making sure it doesn't start to burn. Dont worry about the smoke, just make sure it doesn't burn......Most chefs check the meats cooked to well done by seeing if it feels the same as when you touch the fat under your thumb when your thumb is touching the 3rd finger away from it, (medium is the same as when you touch your 2nd finger and rare is when you touch the 1st finger).

Once the steaks cooked, take the pan off the heat and add a little bit of butter and mix up all the juices in the pan and then serve the juices on top of the steak...lovely jubbly!

If you want something a bit more extravagant try this:

If you have an outdoor grill this is the absolute best way to cook a steak. If not then you can put it under the broiler, or cook it on a grill pan on top of the stove. Sprinkle a little garlic powder, salt, and pepper on both sides before cooking.

id do it about 10 mins on each side for well done

Peppered sirloin steak

Serves 4

Cooking time 10 to 30 mins







Ingredients
For the sprouts
400g/14oz Brussels sprouts
55g/2oz butter
salt and freshly ground black pepper
For the steaks
10g/?oz black peppercorns, crushed
4 x 220g/7oz sirloin steaks
salt
1 tbsp olive oil
100ml/3?fl oz red wine
55g/2oz butter



Method
1. Place the Brussels sprouts in a large saucepan of boiling salted water and blanch for 2-3 minutes. Drain and place in ice-cold water to refresh.
2. Cut the sprouts in half and remove the outer leaf.
3. Heat a large frying pan. Add the butter and Brussels sprouts and sauté for two minutes, seasoning with salt and freshly ground pepper, to taste.
4. Meanwhile, for the steaks, sprinkle the crushed peppercorns over a large plate. Press each steak into the crushed pepper, then season both sides with salt.
5. Heat the olive oil in a large frying pan, add the peppered steaks and cook for two minutes on each side, until browned or cooked to your liking. Remove from the pan and set aside to rest.
6. Add the red wine and the butter. Stir and scrape with a wooden spoon to deglaze the pan and melt the butter then remove from the heat.
7. To serve, divide the Brussels sprouts between four serving plates, then place the steaks on top. Spoon the wine sauce over the beef and serve immediately.
