ALL-BRAN* Bran Flakes Peach Crunch Coffee Cake



Ingredients

250 ml
1 cup
all-purpose flour
10 ml
2 tsp
baking powder
2 ml
1/2 tsp
ground cinnamon
1 ml
1/4 tsp
ground nutmeg
375 ml
1 1/2 cups
All-Bran* Bran Flakes cereal , crushed
250 ml
1 cup
milk
50 ml
1/4 cup
soft margarine
125 ml
1/2 cup
granulated sugar

1
egg
250 ml
1 cup
coarsely-chopped peaches (peeled fresh or well-drained can)
Topping
175 ml
3/4 cup
All-Bran* Bran Flakes cereal , crushed
25 ml
2 tbsp
lightly-packed brown sugar
15 ml
1 tbsp
soft margarine

Directions

1. For topping, thoroughly mix cereal, brown sugar and margarine. Set aside.

2. Stir together flour, baking powder, cinnamon and nutmeg. Set aside.

3. Combine cereal and milk; let stand 2 minutes or until cereal softens. Set aside.

4. In large bowl, cream margarine and sugar until fluffy. Add egg; beat well. Beat in flour mixture alternately with milk mixture. Spread in greased 2 L (9") square baking pan. Arrange peaches on surface; Sprinkle with topping.

5. Bake at 180°C (350°F) 30-35 minutes or until wooden pick inserted near centre comes out clean. Cool on rack 10 minutes before serving.

LOW FAT CARROT CAKE MUFFINS

1 cup flour
1 tbsp baking powder
1 tsp ground cinnamon
1/4 tsp salt
2 cups bran flakes
1 cup skim milk
1 1/2 cups shredded carrots
1/3 cup firmly packed brown sugar
1 egg, slightly beaten
2 tbsp oil
1/3 cup raisins

Preheat oven to 400 degrees F. Coat 12 muffin pan cups with nonstick cooking spray.

Mix flour, baking powder, cinnamon and salt in large bowl; set aside.

Mix cereal and milk in another bowl; let stand 3 minutes.

Stir in carrots, sugar, egg and oil. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in raisins. Spoon batter into prepared muffin cups, filling each cup 2/3 full.

Bake 25 minutes or until golden brown. Serve warm.

BRAN FLAKE COOKIE

1 c. white sugar
1 c. brown sugar
1 egg
1 c. veg. oil
1 c. shortening
3 c. flour
2 c. bran flakes
1 tsp. soda
1 tbsp. sour milk or buttermilk
1 tsp. vanilla
1/2 tsp. almond

Cream sugar and shortening. Add egg. Add soda which has been mixed in sour milk. Add vanilla and almond. Mix in flour and bran flakes. Press cookies down on ungreased cookie sheets. Bake at 325 degrees for 8 minutes.

BRAN FLAKE BARS

1/2 c. butter
1 c. packed brown sugar
2 eggs
1 tsp. vanilla
1/4 tsp. salt
1 c. flour
1 1/2 c. bran flakes
Confectioners' sugar

Combine first 5 ingredients, then stir in flour and bran flakes. Spread in greased 9 x 9 inch pan and bake at 350 degrees for 25 minutes. After cool, sprinkle with confectioners' sugar. If you double recipe, use a 9 x 11 inch pan.
