I think marinades mask the flavor of the meat unless you are really careful. If it's good steak you don't want to mess around with it too much. If it's cheaper like flank steak a marinade is a good idea.
For "good" steak like sirloin or T bone I put a tablespoon of olive oil on a plate, add a minced clove of garlic and a half teaspoon of Worcestershire sauce. Place the steak in this and turn it over. Make sure the garlic gets mashed onto the meat. Leave the steak 30 minutes in this marinade in the fridge. Do this for each steak you're serving. This is the simple recipe I have used for years. Got it from a magazine.
This marinade is very simple to prepare and the steak does not have to marinate very long to capture the flavor of the marinade. You will need :
? cup of vegetable oil, olive oil, or peanut oil,
1 teaspoon of Italian seasoning,
2 tablespoons of red wine vinegar,
1 ? teaspoons of pepper,
If you want more spicy recipes for good steak marinade you should try this one. The ingredients you need include:
2 cups of your favorite beer,
salt,
? cup of olive oil,
vegetable oil, or peanut oil,
1 teaspoon of cayenne pepper,
? of vinegar,
1 tablespoon of horseradish,
1 teaspoon of onion powder,
1 teaspoon garlic powder, and
2 tablespoons of lemon juice.
Stir together all of the ingredients and marinate your steak in the refrigerator for 2-6 hours. It can be left overnight in the refrigerator. You can also use the marinade to baste your steak while cooking.
Steak Marinade
Ingredients
1 tablespoon olive oil
1 garlic clove, minced
1 tablespoon worcestershire sauce
1 tablespoon balsamic vinegar(or white)
1 teaspoon mustard
1 tablespoon soy sauce
pepper
Directions
1Mix all ingredients together and place steaks into freezer bag with marinade, preferably overnight.
2The original recipe used balsamic vinegar.Seems I never had that on hand so I just used white and listed that in the recipe, but balsamic is definitely better.
Here we go again with the "simple is best" routine, as you want to taste the STEAK, the marinade is for some flavor, but you don't want to overpower the flavor of a good steak....
My recommendation?? Again, keep it simple:
Place your steaks in a gallon Zipper Type (the kind with the slide able zipper on top, the disposable ones (think: Hefty or Zip Loc)
Add 1/2 cup of Worcestershire sauce, seal the bag, distribute the marinade all over the steaks, place the bag in the fridge for no more than 30 minutes (45 is pushing it, as the meat fibers will start to break down and you'll have a "mushy" steak. You want tender, NOT mushy....) Remove from the fridge and prepare your favorite way......I like to pan fry them, then put them in a 475 F oven for about 12 minutes....Let them rest for 5 minutes before plating them on a WARM plate....Enjoy!! (this method is called Steak Au Poivre (aw poahhVh)
