My husband makes wonderful burgers. He uses lean ground beef, rolls them into balls (about the size of a tennis ball) and then flattens them out a little (so that they are about 2 inches thick) when they are on the grill. Then he sprinkles on Worcestershire sauce, season salt, onion salt, and black pepper. They are amazing.
all they use is heinz ketchup, mustard, small onion chunks and thin slices of pickle :p
You have to have lot's of blood on your hands 2 come close 2 mcdonalds, but seriously mince beef with egg mixed together to make burgers. chop onion, little bit garlic, tomatoes bit of chiili all fried up add tomato puree and a couple of table spoons of water, fry some more and leave to cool. tastes lovely.
I was making a homemade tartar sauce and discovered it is identical to the special sauce on a big mac.
Mayo
dill pickle relish (add a tablepoon or so and taste it)
paprika
dash worchestshire
finely chopped onion (Tbsp or so)
It's good.
Hello??
You WANT to make something that tastes like McDonalds..? Well, take some cardboard, flake it up, add a mountain of salt, add some E numbers, preservatives and colouring and Bob's your uncle. Sorted.
Alternatively, you could aim a little higher.....
Serves/Makes: 12
Ingredients:
12 Dinner Rolls (Parker house shape, 2 1/2" x 2 1/2" size)
1 pound lean ground beef (80% lean)
1/2 cup water (for beef)
1/2 teaspoon Salt
3/4 cup diced onions
1 beef bouillon cube
1/2 cup Water (for onions)
Dill Hamburger Slices
Directions:
In food processor place ground beef, salt and water. Process for a
few seconds so water and salt are blended through ground beef and
meat should look a little pasty. On a 11" x 13" jelly roll pan
place plastic wrap on bottom. Place hamburger in middle and with
another piece of plastic wrap on top of meat. Roll hamburger out to
1/4" thick. Remove plastic wrap and cut meat into 3" x 3"squares,
leave ground beef pieces on tray. You should get between 12 and 14
squares. Perforate each piece five times with the end of a plastic
straw, this will give the meat little steam holes. Cover hamburger
with plastic wrap and place in freezer until meat is partially
frozen but not solid.
Place onions, beef bouillon, and 1/2 cup water in fry pan. On
medium low heat sauté and stir onions until they are clear, more
water may be added as needed. Turn heat off until ready to cook
hamburger patties.
When beef patties are ready to prepare, turn fry pan on medium low
heat and add enough water to onions just so the bottom of fry pan
is covered. Place patties in pan and cover with lid. Frying time is
just a few moments. Turn patties and cook until done but not dry.
The patties should be juicy. When hamburgers are finished cooking
place on top of a roll add pickles, cover hamburgers so they will
steam slightly or pop in microwave covered just for a few seconds
until ready to serve.

Beef has a fantastic taste, start of with good beef, mince it season lightly. Make into balls of your choice of size and flatten. you do not need to add egg, breadcrumbs, or anything, this is only usally done to detract from the taste of the beef. Start of with good beef and you will have good burgers, start off with **** beef then your burgers will be..........
Heston Blumental who has 3 stars in the Uk does it like this, simple but g8t .
Try and enjoy
My critical child always complements me on my burgers if I make them with Ground Sirloin or Ground Round or Ground Chuck--it just tastes better than plain ol' hamburger--(unfortunately more $$ too).
You'll get a juicier/more tender burger if you'll add a little water or broth to the pan once they're about done, & let them sizzle for a couple of minutes. Then let them 'relax' on a plate or whatever for another couple of minutes b4 eating.
Another thing--ground beef can LOOK done on the outside, but still be pink inside & there's a chance for bacteria/ecoli.
Test w/ meat thermometer your first few times until you get the hang of cooking'em properly.
McD's relish? The 'special sauce' is just mayo & ketchup mixed to gether ........ try Thousand Island dressing, that's basically what it is.
I hear what you're saying my friend. You want a good burger and you happen to like McDonald's relish. That doesn't make you a bad person. I like their Sundaes.
The fattier the ground beef you use, the more juicy it's going to be. Take the beef you have, throw in an egg or two, then smush it all together. You can add any sort of spice at this point, even chopped onions if you want or a little bit of breadcrumbs, but it's up to you. Take your meat, just about a big spoonful and put it into a bowl you own two of. Squish the meat down with the second one of the bowl you own two of. This will give you a good shape that won't fall apart on the grill.
Cook until the juice running out of the burger is no longer red and you have acheived well doneness.
Or, alterntively, you can buy some frozen beef patties. Not as good, but much easier.
These are a hit with our family...
Make thin hamburger patties and put chopped onions, cheese, bacon bits and salt and pepper on top. Then put another thin pattie on top of that.... These are great because when cooked the onions, cheese and bacon bits all cook inside the two patties and are so flavorful!
