How to freeze a cake?!
Answers: After having a Coldstone Creamery cake for my birthday, I have discovered that I love cold cake. But, when baking a cake, how would you get it to stay moist after being frozen? How would you cook it differently?
To keep a cake moist after baking it you need to use pudding in the actual recipe. If u are not sure how much pudding to use your can also use butter in it to keep it moist. About a quarter to a half a stick works very nicely.
I would use a pound cake, wrapped well in foil, for not more than a month.
I would not cook it fully and then freeze it. Over cooking will dry it out.
i would make a regular cake, freeze it while it's wrapped tightly in cellophane, and serve it with some sort of warm fruit or chocolate sauce. Doesn't chocolate make everything better???
When my kids were home, I always packed their lunches. I would bake a cake a week and separate into pieces. Freeze it on a cookie sheet with icing, then wrap each piece in plastic wrap. They could remove one piece from the freezer as desired for their school lunch. I then used the same idea when I started making wedding cakes, and catering weddings. The idea came in handy when I was asked to get the topper freezer ready for the happy couple.
After storing many wedding cake toppers, I have found the best way to freeze cake...freeze the cake without any wrapping if you wish to preserve the look of the cake as in a topper. Then wrap it in plastic wrap, several layers, then foil wrap and put in plastic box or cardboard box, wrap in freezer paper.
Now realize that this is for long term storage of one year, but you could follow the first two steps successfully, say cutting your cake into individual pieces, freezing and wraping in plastic wrap or zip loc bag.
I bake cakes for example bundt cake then remove it from baking pan and let it cool.
Cut the cake in halves or quarters and wrap the portion in foil.
Take the fiol wrapped cake portions and put them in zip lock bags to freeze. The cake when thawed is as if it was just baked,and can be sliced and served as is or any way that you like. The freshness is preserved very well.
