How do you make stuffed mushrooms??!


Question: I just love the stuffed mushrooms @ Copeland's especially with that sauce that comes with it. You should try them, I never used to like mushrooms until I tasted the stuffed mushrooms there in that sauce..OMG--so damn good! Thx in advance!!!

here you are:

stuffed muchroom caps
10 medium mushroom caps
2 tablespoons olive oil
2 slices bacon, finely chopped
1/2 cup fresh breadcrumbs
1 clove garlic, crushed
2 spring onions, finely chopped
1/4 cup grated parmesan cheese
2 tablespoons chopped parsley
1 egg, lightly beaten
Directions
1Preheat oven to a hot 220C degrees.
2Line a 13x11 oven tray with foil; grease the foil.
3Remove mushroom stalks from the caps; chop finely.
4Arrange caps on tray.
5Heat oil in frying pan, add bacon.
6Cook over medium heat for 3 minutes, stirring occasionally.
7Add chopped mushroom stems.
8Cook over high heat for 2 minutes.
9Remove pan from heat.
10Transfer the mixture to a medium bowl.
11Add breadcrumbs, garlic, onion, cheese,parsley and egg; using wooden spoon, stir until combined.
12Divide bacon and mushroom mix evenly into 10 portions.
13Press mix into each cap.
14Bake for 12 minutes or until lightly golden.


Oyster Stuffed Mushroom Caps
24 large mushroom caps, cleaned and stems removed
1/2 lb fresh oysters, , chopped quite fine(, or use the ones in a jar)
3 tablespoons breadcrumbs
1/4 cup butter
3 cloves garlic
2 teaspoons mixed herbs
parsley
basil
rosemary
salt & pepper
2 tablespoons white wine
1/3 cup parmesan cheese or swiss cheese, grated
Directions
1Roll the chopped oysters in the bread crumbs.
2Melt butter and add minced garlic.
3Season with salt, pepper& herbs.
4Fry the oysters in the butter mixture.
5Fill the mushroom caps.
6Place caps in a baking dish, sprinkle with any remaining butter from frypan and the white wine.
7Sprinkle the cheese over the caps.
8Cover& bake 350f for 15 minutes.
9Uncover& broil for 1-2 minutes.


mushroom stuffed mushroom
1(12ounce)package white mushrooms, with stems
2 stalks celery, chopped
1 medium yellow onion, chopped
1 cup breadcrumbs
garlic powder or fresh garlic, to taste
1/4 cup parsley
salt and pepper, to taste(I use a lot of salt)
1/4 cup butter
Directions
1Wash mushrooms and scoop out stems.
2Chop stems as you did with celery and onion.
3Melt butter in large pan on low-medium heat.
4Add everything EXCEPT THE BREAD CRUMBS to the butter.
5Turn to medium heat.
6Sauté over medium for about 15-20 minutes.
7Add bread crumbs, remove from heat.
8Mix well, let cool for 20 minutes.
9Preheat oven to 400°F.
10Scoop stuffing into mushrooms so it's heaping quite a bit.
11Put mushrooms on cookie sheet, no need to grease it (See tip below).
12Place in 400°F oven for 20 minutes.
13Serve hot!
14TIP: This can be prepared in the AM up to the baking part.
15Just leave prepared mushrooms on counter top until you want to bake them (not overnight).

Stuffed Mushroom Appetizers
375 g mushrooms, approx 2 . 5 cm in diameter
2 slices bacon
1/4 cup cheddar cheese
1/4 teaspoon French mustard
1 cup fresh breadcrumbs
1 egg
1/4 cup milk
1 tablespoon chopped fresh parsley
salt
pepper
1 tomato
2 slices cheddar cheese, extra
Directions
1Remove stems from mushrooms.
2Remove rind from bacon, chop bacon finely.
3Heat pan, add bacon, cook until golden brown.
4Remove pan from heat, add grated cheese, mustard and breadcrumbs, mix well.
5Add lightly beaten egg and milk, parsley and salt and pepper, mix until well combined.
6Fill stuffing into cavity of mushrooms. You can be generous! Squash the filling over the top.
7Cut extra cheese slices into 1cm squares. Slice tomato, cut each slice into segments.
8Place one slice of cheese and one tomato segment on each mushroom.
9Place mushrooms on oven trays, bake in moderately hot oven 8 minutes or until cheese has melted.

you take the stems out of them, and chop the stems (mince them really) and add whatever your chosen stuffing ingredients are - onions, black olives, bacon bits, parmesean, etc. then fill each with the stuffing, bake in the oven or pack well and batter and deep fry.

Be creative and have fun. Don't make them - create them :-)

legal aide is right, and add some cream cheese too.

Stuff w/ the stems, crumbled bacon or prosciutto, crabmeat, breadcrumbs. Top w/ cheese.

1/2 cup soft breadcrumbs
1/4 teaspoon oregano
1/4 teaspoon salt

Directions
1Remove stems from mushrooms and chop fine.
2Put bacon, stems, onion, and garlic in a frying pan and saute in small amount butter or olive oil.
3Cook until onion is soft, then drain.
4Stir in remaining ingredients.
5Stuff mushroom caps with this mixture.
6Bake on a cookie sheet at 375F degrees for 10 minutes

Stuffed Mushrooms

1/2 cup chopped onions

1/2 cup panco breadcrumbs
1/4 teaspoon oregano
1/4 teaspoon salt

Directions
---Chop:
*Mushroom stems
*Oysters
*Onions
*Garlic
** Also shread the oregan if it is fresh.

Once you have everything nice and chopped up throw it all in a pan along with aout 1/2 the breadcrumbs saute in with about 2-3 tbl spoons of butter or olive oil.
**** FYI***** If you are using the onions be sure to saute those first till soft.
--Add the remaining bread crumbs (add very slowly till you have the desired cosistancy.... Sorta clumpy....If you feel like it is too dry pour a tbl spoon of the oyster liquid in)
----Stuff mushroom caps with this mixture.
---- Brush with olive oil or 3 tbls spoons of melted butter----

Bake on a cookie sheet at 350F degrees for 10-15 minutes
