Flat cut is leaner. If you are looking for a healthier cut. The point cut has more fat and is therefore, more flavorful.

Personally, I prefer the flat cut.

The flat cut has less fat, and some would say a more bland flavor [not me-I like the flavor of this cut best]. The point or end cut would have a lot more fat, less meat, and some would tell you more flavor. I guess it depends on your personal taste, your menu, and your pocketbook-the flat cut is more expensive. Grain fed brisket will be most tender, and the slower you cook it the less tough it will get. I also like a bit of a crisp outer texture, so I will braise my corned beef in the oven [or you can boil it], until it is almost done, then put it into a baking pan with no liquid, and bake it until done, with the texture I want on the outside. Delicious.
