Anyone have a Lemon squares recipe?!
1 c All-purpose flour
1/4 c Confectioners' sugar
1/2 c Butter
2 Eggs
3/4 c Granulated sugar
3 tb Lemon juice
2 tb All-purpose flour
1/2 ts Baking powder
Confectioners' sugar
Instructions:
Stir together 1 c flour and 1/4 c confectioners' sugar; cut in butter till
mixture clings together. Pat into ungreased 8x8x2 inch baking pan. Bake at
350 for 10 to 12 minutes.
In mixing bowl beat eggs; add granulated sugar and lemon juice. Beat till
slightly thick and smooth, 8 to 10 minutesl Stir together 2 tb flour and
baking powder; add to egg mixture. Blend just till all is moistened. Pour
over baked layer.
Bake at 350 for 20 to 25 minutes. Sift confectioners' sugar over top.
Cool; cut cookies into 1 inch squares.

2 1/4 cups all-purpose flour
1 cup chilled unsalted butter, cut into small pieces
1/2 cup powdered sugar
1/2 cup sweetened flaked coconut
2 cups sugar
4 large eggs
1/2 cup fresh lemon juice
1 teaspoon baking powder
powdered sugar
Directions
1 Preheat oven to 350°F degrees.
2 Butter 13x9x2-inch baking pan.
3 In food processor combine 2 cups flour, butter pieces, 1/2 cup powdered sugar and the coconut.
4 Process until moist clumps form.
5 Press onto the bottom of the prepared pan.
6 Bake about 20 minutes, until edges are golden.
7 In a large bowl, whisk together 2 cups sugar, eggs, lemon juice, baking powder and the remaining 1/4 cup flour until well blended.
8 Pour over hot crust.
9 Bake until topping is set and light brown, about 25 minutes.
10 Cool in the pan on a wire rack.
11 Cut into squares and dust tops with powdered sugar.
12 Can be made 1 day ahead.
13 Cover with plastic wrap.
14 Makes 36 squares.

LEMON SQUARES DELUXE
CRUST:
2 c. flour
1/2 c. confectioners sugar
1 c. butter (2 sticks)
Mix until it clings together (like pie crust). Press down on ungreased 9"x13" Pyrex dish. Bake at 350 degrees for 25 to 30 minutes or until golden. Remove from oven.
Combine:
4 eggs, beaten
2 c. sugar
1/3 c. fresh lemon juice
1/4 c. flour
1/2 tsp. baking powder
Mix and pour over baked crust. Return to 350 degree oven and bake 25 to 30 minutes or until golden. Cool and sprinkle with confectioners' sugar. Cut into squares

Lemon Oatmeal Crumble Square
2/3 cup butter
1 cup brown sugar
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup rolled oats
1 lemon, grated, zest of
2 lemons, juice of
1(10ounce)can sweetened condensed milk
Directions
1Cream together butter and brown sugar.
2Add flour, baking powder, salt and rolled oats.
3Mix until crumbly.
4Press half the mixture into lightly greased 9" square pan.
5Combine lemon zest, juice and condensed milk and pour over crust.
6Sprinkle remaining crust mixture over top.
7Bake at 350° for 30 minutes or until the edges are slightly browned.
8Chill before serving.
9Freezes well.
Lemon Meringue Square Cookies
1/2 cup butter(softened)
1/2 cup confectioners' sugar
1 cup flour
2 large egg yolks
2 large egg whites
1/4 cup sugar
1 lemon, juice and zest of(for 2 tsp of grated lemon peel and 1 Tablespoon of lemon juice)
Directions
1Cream butter.
2Gradually blend in the confection sugar until light and fluffy.
3Add the egg yolks.
4Mix in the flour and the grated lemon peel.
5Spread evenly in bottom of greased 8" square pan.
6Bake 10 minutes at 350°F.
7Let cool while you prepare the Meringue topping.
8Beat egg whites till foamy.
9Gradually add the regular sugar and the lemon juice.
10Beat until stiff.
11Spread over baked mixture.
12Bake 25 minutes longer at 350°F.
13Cool and cut into bars.
Lemons are cylindrical and shaped like a football essentially. They are never square. Therefore I do not have a recipe.
