Soften the cream cheese and pat it into the bottom of a baking dish. Pour the chili on top and spread around, not mixing it though. Sprinkle the cheese on top. Cook in the oven at 350 for about 10-15 minutes, just until the cheese melts and it starts to bubble a little bit. Serve with tortilla chips.

Pineapple cream cheese muffins are easy to make, moreish and gorgeous. The cream cheese gives a luxurious moistness and if you want to indulge a little, these taste great served with a spoon or two of lightly whipped cream.

225g plain flour
2 tsp baking powder
? tsp salt
100g caster sugar
125g pack Discover Pineapple Halo
1 egg
150ml full-fat milk
120ml sunflower oil
100g ready-to-eat dried exotic fruit roughly chopped
Small, fresh pineapple, peeled and finely sliced into 9 rounds (optional), to decorate

Method: How to make pineapple cream cheese muffins
1. Preheat the oven to 200°C/fan180°C/gas 6. Line 9 holes of a muffin tray with 2 paper muffin cases in each hole. Sift the flour, baking powder and salt into a large bowl and mix in the sugar.

Tip
The decoration is easy to make, but packets of dried circles of pineapple are also available in supermarkets.
2. In a medium bowl, cream the Pineapple Halo with a wooden spoon, add the egg and mix well. Gradually add the milk and mix until creamy. Whisk in the sunflower oil with a fork, then fold in the dried exotic fruit.

3. Make a well in the centre of the flour and pour in the creamed mixture. Mix briefly until the flour is combined – make sure you don't over-mix. Spoon even amounts into each muffin case so the mixture comes almost to the top.

4. Bake in the oven for 20-25 minutes, or until cooked and golden. Leave in the muffin tray for 15 minutes, then tip out and cool on a wire rack.

5. To decorate (optional), put the slices of fresh pineapple onto a baking tray lined with baking paper. Put into the oven on its lowest setting for about 1 hour, until dried out. If the slices are still a little moist, increase the oven to 110C/fan90C/gas 1/4 and cook for a further 20-30 minutes. Transfer the slices to a wire rack – the pineapple will crisp as it cools. Store in an airtight container until needed.

Cheesecake

Make a biscuit base (either digestive or ginger). You need 250g philadelphia, 200g cottage cheese, half pint single cream, 1oz caster sugar, juice of half a lemon, vanilla extract and gelatine to set. Push the cottage cheese through a fine sieve, add the philly and mix together, stir in cream, sugar, lemon juice and vanilla extract. Measure quantity of liquid you have and that will tell you how much gelatine to use. It is trial and error with this I was on my third attempt before I got the correct set (I used 5 leaves of gelatine). You can also make a fruit puree for the top or drizzle with chocolate before set and swirl through the mixture. Enjoy :-)

This recipe requires a deep loose bottomed 8" tin

Simple and easy cheesecake

1/2 cup sugar
1 container ( 8 or 12 oz) cool whip
graham cracker crust

Heres a filling to put in a cake or cupcakes

Beat 8oz. cream cheese, 1/2 cup sugar, and 1 egg. Set aside. Make a cake according to the directions. You can pour half into a bundt pan, or fill cupcake papers half way. Put the cream cheese mixture on top of the cake mix, then cover it up with the rest of the mix. Bake in a 350 degree oven until done. You can frost the cake or cupcakes any way you like or just dust them with powdered sugar.

I hope you try these and enjoy them.

P.S. You can put any kind of flavoring in the cream cheese mixture. I made some cupcakes and put 1/2 cup of peanutbutter in the cream cheese mixture. Chocolate chips are also good in it too. Have fun experimenting with these recipes.

*My fav flavors are yollow and cherry chip but they are all good!!!

Another good way to use cream cheese is a cream sauce for pasta. I melt it down with a little milk or 1/2 and 1/2, then I add some seasoned salt, garlic powder/salt, onion powder/salt, and celery salt etc...what ever spices or herbs you like. I also add some chicken or tuna (or no meat), chopped bell peppers, onions, chopped carrots, and corn. Use fettecicni, bow tie etc... Very, very good.

I also made a tuna noodle dish with cream cheese that was melted down with some salsa, and then some cooked wide egg noodles tossed in with some drained (packed in water) tuna.

Making creamy soups or chowders, use some hot broth and mix it in to the cream cheese, then add that mix back into the soup. Do it a little at a time or it may end up somewhat chunky in appearance.

Really simple... put cream cheese in the center of a large plate. Top the cream cheese with lots of cocktail sauce and cooked small shrimp. Arrange Town House crackers like a circle of dominoes around the plate; put a knife on the plate and serve an easy appetizer. I do this at Thanksgiving, Christmas, and Easter.

ceese balls, easy, just add chocolate chips and a touch of baking powder and serve with teddy grams
