Question: I have a great fillet of fish, some mushrooms, celery, onions and usual spices including some exotics, what can I do to use up the mushrooms

Lightly brown the fish in herbs and butter add the celery & onions.

Stuff the mushrooms with bleu cheese or something similar, drizzling with oil and bake until golden yummy.

bake the fish.......make any cream sauce and add mushrooms to it.

do you have any pasta? You could make a creamy mushroom sauce to put over the pasta.
you can bread the fish and fry it, or you can fry it without breading, either way it will go great with a creamy pasta.

Grilled Fish with Herbs

Ingredients

* 6 small or 3 medium fresh or frozen firm fish steaks (1-1/2 pounds total), cut 1 inch thick
* 1/2 cup dry white wine
* 6 tablespoons snipped fresh cilantro
* 2 tablespoons lime or lemon juice
* 1 tablespoon olive oil
* 1-1/2 teaspoons chili powder
* 1 teaspoon pepper
* 1 teaspoon dry mustard
* 1/2 teaspoon salt
* Lime wedges

1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Place fish in a shallow baking dish. For marinade, mix wine, 1/4 cup of the cilantro, the lime juice, oil, chili powder, pepper, mustard, and salt. Pour over fish. Cover and marinate in the refrigerator for 2 hours, turning the fish occasionally.

2. Remove fish from the marinade. Spoon some of the marinade over the fish. Discard any remaining marinade. Lightly brush grill rack with oil. Grill fish on rack of uncovered grill directly over medium coals* for 8 to 12 minutes or just until fish flakes easily when tested with a fork, turning once. Serve with lime wedges and sprinkle with remaining cilantro. Makes 6 servings.

*Note: The coals are medium when you can hold your hand over the heat at food height for 4 seconds before having to pull away.

Sauteed Mushrooms

In a large nonstick skillet, heat 1 tablespoon olive oil over medium-high heat. Add 2 (12-ounce) packages sliced mushrooms and 1 crushed garlic clove. Cook 4 minutes, stirring until browned. Cover and cook 6 minutes more or until just tender. Increase heat to high and cook 4 minutes or until dry. Stir in 3 tablespoons dried seasoned bread crumbs, 1 tablespoon olive oil, and 2 tablespoons chopped parsley. Cook 2 minutes. Salt and pepper to taste.


Herbed Rice

Cook 1 cup long-grain white rice according to package directions, adding 1/2 teaspoon dried basil and 1/4 teaspoon dried thyme. Stir in 1 tablespoon butter; if desired, add 1 finely chopped scallion and 1/4 cup chopped parsley. Salt and pepper to taste.

you can make soup or bake the fish with chopped up veggies and spices by putting everything in foil.

cook the mushrooms with a little tomato on the stove until they are nice and warm and like squishy.
