Salmon Patties for dinner?!


Question: I am making salmon patties for dinner. I need ideas for side and veggie.

I usually make fried potatoes but wanted something different.

I have cheesy potatoes, mac & Cheese, 3 different kinds of lipton sides (creamy chicken rice, rice melody and three cheese bowties) I also have cottage fries, a bag of egg noodles and I think minute rice ohhhh I just got a box of stuffing too. If you have a better idea I can stop at the store on the way home from work.

I make homemade macaroni & cheese to go with salmon, but I use SWISS cheese--the extra tang of the cheese is great with the salmon..

Salmon and potatoes are an excellent combo....

I always make Salmon patties with Collard greens or Spinach and Mashed or fried potatoes.

Lemon, aspargus, lentils and ginger root are brilliant for a garnish sauce on salmon patties :)

I like potatoes, mashed or oven-fried. I think you've run the gamut. I also make a cheese sauce to pour on the patties using block cheddar cheese, milk and flour, salt and pepper.

Try a squash and zucchini casserole. You need a can of diced tomatoes, cheese, onions and add a little salt and pepper. Sautee the squash and zucchini with olive oil first before placing in the casserole dish. Hmm, delicious.

Yeah...seeing your question reminded me of the salmon that I ate last night....it was so bland! I'm new to this cooking healthy "thing". In my family, we fry everything....I'm trying to break the cycle.
