Yes, no problem. I always make too much, and usually freeze the rest. Keep it covered though - the defrosting can dry it out a little, but nothing a dash of milk won't cure

I do it all the time. I also will add the gravy to it before I freeze. I found that when I defrost they get a little watery and the gravy helps keep them thicker. I would just watch out for how long you leave them in the freezer. Sometimes they tend to get freezer burn quickly.

of course, if you eat it the next day...

yes. freezing is one way for delaying food spoilage so its ok to freeze mashed potatoes. but freezing it could do some slight changes in its texture :)

Perfectly okay. in fact Delia Smith is recommending use of frozen mashed potato in her "How to cheat ...." series.

yes you can freeze mashed potato, I use an ice cream scoop and place them individually on a tray which I place in the freezer for a couple of hours then I place them in a freezer bag and take them out as i need them saves a lot of waste.
