Easy Apple Butter

2 cups granny smith apples(pared, cored and sliced, or use your favorite cooking apple)
1/4 cup brown sugar
1/4 cup natural apple cider
1/2 teaspoon cinnamon
Directions
1Bring apples, brown sugar, and apple cider to a boil, then simmer gently for one hour, stirring occasionally.
2Remove from heat, add cinnamon, then mix in a blender or food processor until smooth.

Crockpot Apple Butter

5 1/2 pounds apples - peeled, cored and finely chopped
4 cups white sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Place the apples in a slow cooker. In a medium bowl, mix the sugar, cinnamon, cloves and salt. Pour the mixture over the apples in the slow cooker and mix well.

Cover and cook on high 1 hour.

Reduce heat to low and cook 9 to 11 hours, stirring occasionally, until the mixture is thickened and dark brown.
Uncover and continue cooking on low 1 hour. Stir with a whisk, if desired, to increase smoothness.

Spoon the mixture into sterile containers, cover and refrigerate or freeze.


I just found a low-fat crockpot recipe - here it is:

8 pounds apples, peeled, cored and diced
1 1/2 cup apple juice
2 teaspoons cinnamon
1 teaspoon nutmeg

Puree apples in blender with apple juice. Pour mixture into crockpot and cook for 6-7 hours; stirring occasionally. Cool mixture and blend in cinnamon and nutmeg. Refrigerate.

Ingredients and Equipment

* 9 quarts of Applesauce, fresh or canned (See step 1)

2 tablespoons of ground cinnamon

1 teaspoon ground cloves
*

1/2 teaspoon of allspice
*

2 cups sugar, Splenda or frozen concentrated grape juice.
* Jar grabber (to pick up the hot jars)
* Lid lifter (has a magnet to pick the lids out of the boiling water where you sterilize them. ($2 at WalMart, Target, and sometimes at grocery stores)
* Jar funnel ($2 at WalMart, Target, and sometimes at grocery stores)
* 1 Crock pot (slow cooker) 6 quart size (if your crockpot is smaller, just reduce the ingredients proportionately)
* Large spoons and ladles
* 1 Canner (a huge pot to sterilize the jars of apple butter after filling (about $30 to $35 at mall kitchen stores, sometimes at WalMart (seasonal item))
* Ball jars (Publix, WalMart carry then - about $8 per dozen quart jars including the lids and rings)
