Answers: I love sushi, however it's impossible for me to eat it everyday. Are there any recipes that pay tribute to the ingredients used in sushi, but as an actual meal?

you will have to buy nori (seaweed sheets) and sticky rice
cook the rice let it cool and dable it on the sheet of seaweed, make a line of the ingrediants (cucumber, tuna, salmon, anything really) and i like to sprinkle the rice with seasame seeds. role it up tightly (it will show you on the package of seaweed) and cut into slices and dip in regular soy sauce.

You buy the sheets of dried seaweed (they're actually tasty and pre-salted), put rice on it and flatten it, put like a strip of carrot (the shape of celery), a strip of spinach, a strip of egg (scrambled), and roll it up, and cut it...
There's this little wooded sheet that you lay it on to roll it more easily.
Just make some rolls at home. I don't actually use raw fish because I'm in a rural area and fresh fish isn't available. Just buy some sushi rice, avacado, cucumber, smoked salmon lax, nori, soy sauce and wasabi and make your own. It is sooo easy.
have you heard of chirashi zushi? Its a bed of rice with the ingredients of sushi rolls chopped up and placed on top. Its popular in japan. I also make something that is "reminiscent" of sushi- I use buckwheat soba noodles, make a soy mirin and sesame paste dressing. You make a plate with salad leaves and bits of red pepper, then put the cold soba on top nested in the middle, Then top it with chunks of raw salmon or cooked salmon, tuna, tuna from a tin, anything you like, then top with sesame seeds and drizzle with the dressing. Its fantastic, you should try it!

simple. Go to the grocery store and look at the asian section. You can buy sticky rice to make, buy sea weed, soy sauce and add whatever ingrediant you would like. Just wrap everything up in your sea weed and it will practically be the same as sushi...
