persian chicken salad

1. Ingredients

1. 1 1/2 pounds small new potatoes, cut into quarters
2. 3 tablespoons olive oil
3. 1 1/3 boneless skinless chicken breasts
4. 1 1/2 teaspoons salt
5. 1/2 teaspoon fresh-ground black pepper
6. 1 cup plain yogurt
7. 1/2 cup mayonnaise
8. 1 tablespoon Dijon mustard
9. 1/4 cup lime juice
10. 4 carrots, grated
11. 2 cucumbers, peeled, halved, seeded, and cut into 1/4-inch dice
12. 2 ribs celery, cut into 1/4-inch dice
13. 1 cup frozen petite peas, thawed
14. 1 red onion, chopped fine
15. 1/2 cup Kalamata or other black olives, halved and pitted
16. 1/3 cup chopped flat-leaf parsley
17. 1/2 cup chopped fresh basil or parsley

2. Cooking Directions

1. Put the potatoes in a medium saucepan of salted water. Bring to a boil, reduce the heat, and simmer until just tender, about 12 minutes. Drain the potatoes and let cool.
2. In a large nonstick frying pan, heat 1 tablespoon of the oil over moderate heat. Season the chicken with 1/4 teaspoon each of the salt and pepper. Cook the breasts until browned and just done, about 5 minutes per side. Remove the chicken from the pan and let it cool. Cut into 1/2-inch chunks.
3. In a large glass or stainless-steel bowl, whisk together the yogurt, mayonnaise, mustard, lime juice, and the remaining 1 1/4 teaspoons salt and 1/4 teaspoon pepper. Add the potatoes, chicken, carrots, cucumbers, celery, peas, onion, olives, parsley, and basil and toss.

Pretty simple dinner tonite, I picked up apple pork loin from my supermarket deli ( it is delicious), going to steam brocoli and corn on the cob. No trouble dinner, that is what I like

Fried fish, salad, white cilantro lime rice!!! mmmm yummy

whatever my mom feels like making.

pasta with meatballs and garlic bread. obly prob is i cant get the top off the sauce and have to wait for my fiancie to get home!

i'm making tacos because my kids expect it at least once a week, i don't really care for tacos, so i will have to scrounge something up for myself. i will probably go light and just have some steamed veggies or a salad.

I've got two sirloin strip steaks that I'm going chop up and grill. My own garlic mashed potatos, peas and corn and a Guinness

I roasted a chicken on Sunday. Last night cooked some (not homemade, but at least the Amish kind from the store) noodles in chicken broth and added celery and onion and the chicken and a bit of gravy. So, chicken and noodles...

Pork chops, roasters, carrot, swede and curly kale.

I'm having grilled chicken, mashed potatoes, salad, corn and soda bread. Then hopefully something yummy for dessert, depending on what my uncle brings home after work!

I took some pork chops out of the freezer but I haven't decided how I am going to fix them yet.

We are having pork burgers on the grill and something to go with it. Haven't figured it all out yet!

Cream cheese patties with mushroom sauce and blanched green beans, toasted whole wheat bread and fresh tossed salad with avocado's.
