Can someone suggest a healthy oatmeal raisin cookie recipe?!


Question: Ingredients

1/2 cup brown sugar
2 egg whites
2/3 cup applesauce(unsweetened)
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt (optional)
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 1/2 cups old fashion oatmeal
2/3 cup raisins
1/2 cup walnuts (optional)

Directions

1.Mix first four ingredients together.

2. Add flour, soda, salt, cinnamon, nutmeg.

3. Stir in oatmeal, raisins& walnuts.

4. Drop on cookie sheets which have been sprayed or use parchment paper.

5.(flatten with fork) Bake in 350 oven for about 10 minutes.

By adding raisins you also add a little additional sweetness Enjoy!

No cookie is really "healthy" because of the fat but at least with oatmeal raisin you are getting some fibre. Any recipe will do. go to allrecipes.com

the fact that the name is OATMEAL RAISIN sound pretty healthy on its own

I can. I have a health book (ultimate foods for ultimate health) includes a recipe of healthy oatmeal raisin cookies.

1/2 cup (125ml) unsalted non-hydrogenated margarne
1/2 cup (125ml) dark brown sugar
1/4 cup (60ml) granulated sugar
1 omega-3 egg
2 tbsp (30ml) water
1/2 tsp (2ml) pure vanilla extract
11/4 (310ml) rolled oats, old fashioned or large flake
11/4 (310ml) whole wheat flour
2 tsp (10ml) cinnamon
1/2 tsp (2ml) baking soda
3/4 cup (175ml) raisins

1. Preheat the oven to 375' F (190'C). Line a cookie sheet with parchment paper.

2.In a medium bowl, cream the margarine. Beat in the white and brown sugars until fluffy.

3.Add the egg, water, and vanilla. Beat until creamy.

4. Add the whole wheat flour, rolled oats, baking soda, and cinnamon. Mix until combined. Stir in the raisins.

5.Drop by rounded teaspoon (5ml) onto the cookie sheet.

6.Bake for 12 to 14 minutes. Cool slightly before removing from the cookie sheet. Let them cool the rest of the way on a wire rack, if you can wait that long.

Makes 50 cookies. 1 serving = 2 cookies.
