Did this fabulous thing with fresh spinach the other night?!
Answers: Where I wilted it, then added pieces of cooked bacon, mushrooms, and french fried onions. The kids thought it was amazing! They won't eat spinach plain or creamed (ew). How do you get your kids to eat spinach? Would LOVE to have more options for this veggie.

I always loved wilted spinach with lemon juice on it.
Keep up what you did or put it in salads
I give it a quick boil just to wilt it and then drain.
After I drain, I remove as much water as possible by pressing into the strainer.
I chop it up and cook it with olive oil and garlic in a saute pan
The important step here is getting rid of the liquid. Otherwise it will have that mushy taste

I hide it in Italian Wedding soup, stuffed mushrooms, baked artichoke dip (I puree it...it just makes the dip more green...they just call it "that green dip), and raw in salads (they think it's just darker lettuce.
The french fried onion part is genius. I'll bet the whole thing would be fantastic stuffed into a baked potato for a meal!
idk but i hate mushrooms and spinach. but u can go to subway and use spinach on the sandwich instead of lettuce.
I like to buy it in those little ready made bags and make a salad out of it. It's easier to eat that way because it doesn't look ooky, and you can mix it in with other greens and vegies.
Spinach is great in a wrap, sandwich, soup or salad ...
The trick with kids is "out of sight, out of mind" ... just ensure that the spinach is not the MAIN ingredient, where its sticks out giving your kids the old rasberry ...
Mix it in with other wholesome foods and (as you've discovered) they will not notice ... it does not take much spinach to make a healthy portion, so it should be easy ...
I like it better than romaine or ice lettuce and those were always so dominant (crunchy, watery) ... my main leafy green now is spinach ...

garlic, onion(stripped), salt and a bit of ground beef(organic).
stir fry them with garlic and onion first . on another pan, buttered and stir fry some ground beef. move in with the spinach and finally mix them up together with a pinch of salt.
SPINACH & BACON LASAGNA ROLLS
1 tbsp. olive oil
1 (10 oz.) pkg. leaf spinach, thawed, drained, chopped
1 (15 oz.) container Ricotta cheese
1/2 c. grated Parmesan
1 pkg bacon
1 egg, beaten to blend
1 tbsp. chopped parsley
2 c. prepared spaghetti sauce
8 lasagne noodles, freshly cooked
1 1/4 c. grated Mozzarella
Preheat oven to 350 degrees. Heat oil in heavy medium skillet over medium-high heat. Add spinach and cook until tender. Cool. (I didn't do this step. I just took regular frozen spinach and thawed it. Instead, I used the oil to lightly spread over the cooked lasagna noodles before putting the ricotta mixture on it later on..)
Combine spinach, Ricotta, Parmesan, egg, uncooked bacon and parsley in large bowl.
Spread 1 cup spaghetti sauce over bottom of 8 inch square baking dish.
Pat 1 lasagne noodle dry with paper towel. Set on waxed paper sheet. Spread about Ricotta mixture over entire noodle. Carefully roll up noodle, starting at short end, to enclose filling. Arrange seam side down in prepared dish. Repeat with remaining noodle and mixture. Sprinkle with Mozzarella.
Bake until cheese melts, about 45 minutes. 4 to 6 servings.
Tastes amazing. I just had this for dinner the other night and I absolutely loved it!!
Alternative: Instead of using spaghetti sauce on the bottom of the pan... I made my own 'cream' sauce by heating milk in the saucepan and added flour and some spices, nutmeg, parsley. I don't really enjoy sphaghetti sauce all that well and this was a wonderful alternative.

When I'm cooking for kids, I use fresh baby spinach as a replacement for lettuce in sandwiches and salads.
They seem to like it allot, and it doesn't look like what they're used to, so they don't know the difference.

Portobello Stuffed with Sausage, Spinach and Smoked Mozzarella Recipe courtesy Bobby Flay, 2007
Show: Boy Meets Grill

3/4 pound mild Italian sausage
1 medium Spanish onion, sliced
6 tablespoons olive oil
1/2 cup dry red wine
8 ounces fresh spinach leaves, stems removed and coarsely chopped
1/2 cup water
Salt and freshly ground black pepper
4 tablespoons chopped fresh basil leaves
4 tablespoons chopped fresh flat-leaf parsley
12 ounces fresh smoked mozzarella, cut into small cubes
4 large portobello mushrooms, stems removed
2 plum tomatoes, thinly sliced
Preheat grill to medium-high heat.
Brush sausages and onion slices with olive oil and place on the grill. Cook until browned on all sides.
Put the sausage and onion into a saute pan, add the wine and cook until the wine is completely reduced. While the wine is reducing, break up the sausage into small pieces. Add the spinach, 1/2 cup of water and season with salt and pepper. Cook until the spinach has wilted, about 2 minutes. Remove from the heat and stir in the 2 tablespoons of the basil, 2 tablespoons of the parsley and the cheese and let cool slightly.
Heat the grill to high.
Brush the mushroom caps on both sides with the remaining oil and season with salt and pepper. Place the mushrooms on the grill, top side down and cook until golden brown, about 4 minutes. Remove the mushrooms from the grill and place on a flat surface, cap side down. Fill the mushrooms with the sausage mixture and top each with a few slices of tomato. Season the tomatoes with salt and pepper and place on the grill, cap side down, close the cover and cook until the mushroom and filling have heated through, the cheese has melted and the tomatoes are soft, about 5 minutes. Chop it up finely and mix it into mashed potato with some strong cheddar cheese - lots of goodness there and mixing green vegetables into other foods is always a good ploy!!!
You can also make "veggieburgers" quickly too and add a slice of cheese on top with a slice of fresh tomato and lemon juice!
Try adding that mixture to the top of your pizza.
I add it to just about anything. Quiche, stew, stir fry [julienne style, about 1/2 cup], soup, spaghetti sauce, casseroles, sandwiches and wraps, pizza, calzones, omelets and breakfast casseroles. There are so many ideas. I just started tossing a tiny bit in to see if they'd notice, then added more the next time. It never hurts to try. And I do this with as many veggies as I can. My homemade garden spaghetti sauce has small portions of zucchini and/or yellow squash, mushrooms, onion, garlic, celery, shredded carrot [sweetens it without sugar as some add], diced canned tomatoes, tomato sauce, diced green peppers, shredded spinach, and black olives. All were diced really small so the kids would eat it [when they were young], but if I forget a veggie, I hear about it. They think I am depriving them now.
i mix spinach with the ricotta cheese in lasagna and stuffed shells. i also mix it into my calzones/strombolis.
my son loves spinach .... I make a quiche with it, put it in salad, and he loves it creamed
