What kind or curry powder do i use in this satay chicken recipe?!

2 tablespoons creamy peanut butter
1/2 cup soy sauce
1/2 cup lemon or lime juice
1 tablespoon brown sugar
2 tablespoons curry powder
2 cloves garlic, chopped
1 teaspoon hot pepper sauce
6 skinless, boneless chicken breast halves - cubed

make your own curry paste from chillis, garlic, ginger, turmeric, coriander root, fish sauce, oil, candlenut, and lemongrass- blend to a paste and use 2 tbsp of that. Nothing beats the fresh curry paste! Otherwise any brand will do... try to get a malaysian or thai curry powder not an indian one or it will come out tasting like indian food!

A "real" curry recipe would not call for curry powder. In India there is no such thing. Use what you like...or what you have!

This recipe is just referring to the standard curry powder mix that is available in your supermarket (either British or American brands) they are pretty much the same...Don't worry about comments made by the 'goumet elite'...Sometime you just want DINNER...and sometimes you want to take your time and do things authentically.

I do both and certainly don't apologize for my quick and easy recipes!!! They are good, too! Hey, I love Satay and i also use a mix that is called "SATAY SEASONING" by AYAM brand that I bought at an asian store...It has your curry spices and garlic, lemon, ginger and sugar...so it is ULTRA easy...

Just use normal curry powder or if it specifies, those meant for meat or chicken.

Your recipe is certainly not authentic satay, due to curry powder, peanut butter, soy & hot pepper sauces. But if you enjoy the taste, why not? The amount of soy sauce seems excessive, but it appears to counter the same amount of lemon juice. For some tartness I would prefer to use lime juice or tamarind juice. For sugar, I like to use those with some character like palm sugar (gula melaka) or maple syrup. To add fragrance, you can use lemongrass or some fresh coriander/cilantro leaves. For some fruitiness, add finely minced pineapple pulp.

Answering your question .. for this marinade ??
The curry powder here mean.. ordinary Beef Curry Powder which you can always buy in in spice store.

But if you thinking of doing Satay Chicken (Asian style it's not complicated like your recipe ) I'll give you my Malaysian/Singaporean recipe)

500 g Boneless chicken - cube

Marinate :
1 tsp turmeric powder
1 tsp cumin seed
1 tsp coriander seed
1 tsp fennel seed
1 lemongrass
1-2 in ginger
2-3 tbsp sugar
Salt as taste

- Process all the marinade ingredients in food processor.
- Marinate the chicken cube.. for at less 2 hour at least
- Arrange the chicken on skewers. Grill for 5-6 minutes. or
you can fry-pan with very little oil.
- Enjoy with peanut sauce, raw chopped cucumber, rice cube, slices Onion.
