A easy recipe for straw rubarb pie not with homemade crust?!


Question: This is a pretty simple rhubarb pie that I make. I'm sure there are some fancier ones out there.

4 cups cut rhubarb
3 Tbsp flour
1 1/3 - 2 cups sugar

Combine sugar, flour and rhubarb. Fill unbaked pie shell. Cover with top crust. Bake for 15 minutes in 450°F then reduce oven to 350°F and bake for 40 - 45 minutes longer.

Rhubarb is great combined with other fruit in a pie, like apples, or strawberries. It takes on the taste of whatever it's combined with.

Strawberry Rhubarb Streusel Pie
1? hours | 30 min prep | 1 9inch pie

Ingredients
3 cups chopped fresh rhubarb(or frozen, thawed)
1 cup sliced fresh strawberries(or frozen,thawed)
1 cup sugar
3 tablespoons flour
1/2 teaspoon lemon juice
1 9" unbaked pie shell

Topping
2/3 cup flour
1/2 cup brown sugar, packed
1/2 teaspoon ground cinnamon
1/3 cup hard margarine or butter

Directions
1Combine fruit, sugar, flour and lemon juice and stir well.
2Turn into pie shell.
3To make topping; combine dry ingredients and cut in margarine until crumbly.
4Sprinkle over rhubarb mixture.
5Bake at 375 degF for about 50 minutes.
6Cut into 8 wedges.
