Caramel easter eggs?!
i found this recipe for chocolate eggs with a caramel filling, but i found it to be confusing and overwhelming.

The recipe seems confusing at first glance, but I bet if you break it down step by step it won't seem so bad.
The first part is simply coating the molds so that you have somewhere to put the filling.
Second part is preparing and using the fillings.... simple enough.

I'm sorry... I thought you were making a candy egg that was flat on the bottom like this link shows.
After reading some other answers I realize you are making 3D eggs. Someone else mentioned using the chocolate to glue two halves together and that is absolutely correct.
She also mentioned melting Kraft caramels and filling with those... I would thin them with a 1/2 can of Evaporated Milk first to prevent the filling from being too thick if that is the route you are going to go.

The last part is simply unmolding the eggs and coating the bottom (the flat side where the filling is exposed) with chocolate.
You'll be alright... just take it slow and don't expect them to be perfect on first try. They'll still taste just as good.
Why not buy Cadbury Caramel Eggs, so much easier and so yummy.
Sweetie, simply melt chocolate and pour a little of it into each of the egg shaped candy molds turning to coat the entire shape or brush it on with a pastry brush if needed- this method may need additional coats to get it thick enough. When they are set, take a bag of kraft caramels, melt it down and pour them into the molds. Let them set up, and use melted chocolate to glue the halves together. NO WORRIES! When you separate the chocolate from the mold, quickly run the plastic side under very warm water and pop them out, or you could coat the chocolate side with a light cooking spray before you add the chocolate, so they pop out.
If you think you'd like a more creamy caramel, then add a tbsp each of butter and cream. It will be awesome.
make a chocolate cake egg shape and put a caramel icing on it....
