Every time I cook steak it turns out tough/chewy & doesnt taste good..(maybe its not a quality piece) I dont over cook it either as I like it medium to well. Say 5/6 minutes each side -is that too much?
Many thanks

First thing you need to do is bring the meat to room temperature before you cook it. The meat seizes up on going from the refrigerator to a hot grill or pan. So let it rest. Second, don't put too much salt on a steak before its cooked because salt draws moisture out and you will have a toughter steak that way. Also, let your meat rest for at least 5 minutes after you have cooked it (It will continue to cook during this time) so the juices redistribute back into the meat...otherwise you will have only one good bite and that is the first bite.
Normally 8 minutes per side under the grill.
Check that you are cooking the right cut correctly. You don't want to be trying to fry stewing steak etc
Depends on the thickness of the steak. For a steak that is 3/4" to 1" thick, that wouldn't be too long. If it is a thinner steak, that may be too long.
It probably depends more on what cut of steak you are using. Try a ribeye (my favorite!), strip steak, or t-bone - make sure it is a fairly thick cut. Just season with salt and pepper to let the steak flavor shine.
I wish I had some actual times to share with you - my husband usually cooks the steaks around here. But I know that he often refers to the BBQ/Grilling cookbook from The Best Recipe series, and his steaks are always the BOMB!
My best steak is ribeye.
Heat an iron skillet with a little canola oil to really, really hot!!
Add steak, cover, cook three minutes on first side, then turn and cook 3 minutes for med., 4 or 5 for well-done.
Don't cut into the steak or prick it with fork while cooking.
Let set for 4 or 5 min. before eating.
You want to "sear" the outside by placing it close to the flame for just a few minutes first, both sides. Then, move the steak(s) a few inches away from the flame until done to your liking.
If it's a thick steak, will take longer than a thin one. Also, I don't season the steak with anything, it will help dry out the meat. Save the seasoning until after the steak is cooked.
Thick steak (1")= approximately 7-10 min. per side.
Thin steak (1/2")=approximately 5-7 min. per side.
One answer and it's ( good cutt of beef )
