What are some ways I can make plain white rice have flavor but not a lot of extra fat and calories?!

When you prepare it, boil it in chicken broth rather than water. Adds a lot of flavor and protein, very little fat or calories.

You can also use beef broth, add mushrooms for extra flavor.

I add chicken bouillon to the water before it starts boiling. It adds hardly any calories.

Add some soy, curry or herbs to the salted water or a stock cube.

Sometimes I put lemon juice or garlic in the water when it's boiling to add flavor, and it doesn't have any extra fat or calories.

A touch of Nutmeg after cooking. Not too much, just enough to awaken the taste buds, and one wonders, 'What is that'?

sauté some onions, green peppers, and chopped garlic if you have one or all of them. then add chili powder to that mixture. a small dash of cinnamon and cumin powder. or if you have some taco seasoning, some of that....mix with the cooked white rice, and add salt/pepper to taste, a little lime juice (little) and you have "dirty rice".......You can add black beans, and whole kernel corn (drained) to it for taste and color, as well as chopped tomatoes, chopped green onions.......

You have the right idea but, if you really want to do this right, eat brown rice instead of white rice. Brown rice has complex carbs and fiber that will end up being much healthier.

I recommend cooking with stock instead of water. I also saute some onions until lightly browned before I add the rice/stock. Sometimes I also add some saffron or another spice.

try adding some spices the ones that apply to your taste, cumin is smoky, cayenne is spicy, lemon pepper is well lemony and a bit of spice, for an italian, try basil, oregano, and garlic powder

i sprinkle mine with a little sugar and Cinnamon

use a can of beef consomme in place of some of the water, saute some mushrooms, minced onion add the rice and liquids and a package of dry french onion soup. it is delicious.

along the same lines as the salsa, after it is cooked, add some fresh chopped tomato, green onion, cilantro, and chopped olives, black and or green, squeeze on fresh lime or lemon juice.

if you can afford it add saffron.

for a change I like to use jasmine rice...the flavor is very delicate and soooo nice an accompaniment to any dish, especially oriental food.

Try using chicken or beef broth or stock instead of water. If you like peas, mix some in the rice.

Prepare the rice in stock rather than water.

The easiest way is to use a cube of concentrated stock (bullion). Vegetable, chicken or beef work well added to the water as you are bringing it to a boil.

Also try adding dry herbs and spices. Thyme, sage, cumin turmeric all work well if added (individually) at about 1/4 tsp per cup of rice. This can be done in addition to the stock.

Saffron is a wonderful flavoring for rice but expensive. About 8 threads per cup is all that are needed.

Always add salt to rice to enhance flavor. About 1/2 tsp per cup of rice. This equates to about 250 mg of sodium per serving. Omit the salt if you are using bullion cubes.

You can cook rice in many things other than water. I've used

Tomato Juice
Orange Juice
Beef or Chicken Stock

Adding other things like green onion or ginger or curry or salsa just before it's done is really good as well. Try some different things depending on what you like.

Cook it in chicken, beef or vegetable broth instead of water. Experiment with different herbs & spices like Mrs. Dash, curry, cumin, rosemary etc.

You can add spices to the water when you make the rice ... or you can add some oil-based salad dressing to either the water, or to the rice when it's cooked.....

Try this- Put some margarine in pot, add hand full of extra fine egg noodled. cook until golden brown. Add 1 cup rice 2 cups chicken broth,salt to taste. Bring to boil, cover lower heat to simmer and cook until water is absorbed.

I add parmesean cheese to plain white rice. Stir it up a bit and enjoy!
