Question: Hot And Spicy Chicken Soup

Ingredients
750ml chicken stock
1/4–1/2 red chilli, de-seeded and very finely chopped
1 small lemongrass stalk, outer leaves removed and finely chopped
1 teaspoon tamarind paste
1/2 teaspoon grated fresh ginger
A handful of coriander, stalks left whole and tied in a little bundle and leaves roughly chopped
160–180g skinless free-range chicken breast
1 spring onion, finely sliced
2 tablespoons fish sauce
1 and a 1/2 to 2 tablespoons lime juice

Directions
Bring the stock to the boil in a saucepan with the chilli, lemongrass, tamarind paste, ginger and stalks of the coriander.
Once boiling, gently lower the chicken breast into the stock and simmer for 20 minutes, covered.
Turn the chicken over halfway through the cooking time. Discard the coriander stalks and remove the chicken breast.
Thinly slice the chicken and add back into the soup with the spring onion, chopped coriander, fish sauce and lime juice.
Reheat the soup and when piping hot, serve.

Ingredients
1 1/2 cups water
2 cups potatoes, peeled and diced
2 carrots, peeled and shredded
1 sweet onion, diced
1/4 cup green pepper, chopped
1 jalapeno pepper, seeded and diced
1 clove garlic, minced
1 tablespoon beef bouillon granules
1/2 teaspoon salt
1 pound lean ground beef, browned
2 1/2 cups milk, divided
3 tablespoons all-purpose flour
8 ounces American cheese, cubed
1/4 to 1 teaspoon cayenne pepper (depending on how spicy you like)
8 ounces bacon, cooked and crumbled

Directions
In large saucepan, combine water, potatoes, carrots, onion, green pepper, jalapeno, garlic, bouillon granules and salt.
Bring to a boil.
Reduce heat and simmer 15 to 20 minutes or until potatoes are tender.
Add ground beef and 2 cups milk.
Whisk together flour and remaining 1/2 cup milk. Add to soup.
Cook until mixture thickens.
Add cheese, stirring until cheese is melted.
Add cayenne to taste.
Add bacon and heat through.

You can use vegetable, or chicken or beef stocks. How much depends on your preference. Smash garlic, slat and a bit of pepper. slice small green chillies widely, then add big red chillies, all according to how hot you want it to be. Cut up soem carrots, tomato, beans, cauliflower and whatever else you like. Stir well then leave to boil.
