Healthy Chili recipe?!


Question: Just bought a crock pot and love how easy it is to use. I'm trying to watch my diet so I'm looking for a good, healthy chili recipe. Can be chicken, beef, turkey, whatever. What's good?

Healthy Crock Pot Chili



Ingredients
# 2 lbs chicken breasts
# 3 bell peppers(green, red and yellow)
# 1 medium onion
# 1 teaspoon chili powder
# 1/2 teaspoon cumin
# 2(14ounce)cans black beans
# 1(4ounce)can green chilies
# 1(14ounce)can creamed corn
# 1(14ounce)can stewed tomatoes
Directions

1.
Chop peppers, onion and chicken into bite size pieces.
2.
Saute the above with spices until vegetables are soft and chicken is no longer pink.
3.
Dump chicken mixture into crock pot with green chilis (drained), corn, tomatoes and only one can of beans (drained).
4.
Puree remaining can of beans in it's own liquid with hand blender or food processor.
5.
Add to crock pot and cook for 4-6 hours on low

Ingredients
1-2 Italian sausages
2 onions, peeled and chopped
2 cloves garlic, peeled and minced
1 tablespoon chili powder
1 teaspoon oregano
1 teaspoon ground cumin
1 1/2-2 1/2 teaspoons cayenne(to taste) (optional)
1(28ounce)can diced tomatoes, juice included
2 medium sweet potatoes, peeled and chopped(approx. 1/2" cubes)
1(19ounce)can red kidney beans, drained and rinsed
1/2 teaspoon sugar (optional)
1/4 teaspoon salt (optional)
chopped cilantro or parsley(to garnish) (optional)
Directions
1Remove sausage casings and crumble sausage meat.
2In a large pot, brown sausage meat over medium heat until no pink remains.
3Add onion, garlic, chili powder, oregano, cumin and cayenne (if using) to sausage.
4Cook for 2 minutes.
5Add tomatoes and their juice, beans and sweet potatoes to meat mixture.
6Increase heat to medium high, bring to a boil, stirring often.
7Cover, reduce heat to low and simmer for 30 min.
8or until potatoes are soft.
9Stir occasionally.
10Add sugar and/or salt to adjust taste.
11Serve garnished with cilantro or parsley.

White Bean Chili

1 onion, chopped
2 cloves garlic, minced
2 cups chicken broth
1 whole chicken or 4 breasts (frozen breasts are easiest and healthy, you don't even have to thaw them first, but the whole chicken gives more flavor and makes a stock)
2 teaspoons cumin
1 teaspoon cayenne
1 teaspoon oregano
4 oz green chili, diced (can be found in the "mexican" aisle)

Cook on high 4 hours, or low all day while you're at work.

Remove chicken. Debone if needed, and shred. Put back in stock & stir with with

4 cans of white beans, drained
salt and pepper to taste

Slow cook on high an additional 1/2 hour.
Excellent served over some crusty day-old french bread.


To make it faster: Saute onions & garlic in butter in a large pot. Shred a deli/rotisserie chicken. Add everything and simmer until its hot.
