Make beans and taters the southern way.

I usually boil them with ham untill tender they are great when they are cooked like this .

bring a pot of water to the boil with a garlic clove. Add beans. Cook6 to 8 minutes until barely cooked. Drain. Squeeze some lemon, a little extra virgin olive oil, and papper. YUM

Quick pickled dilly beans

This is an adaptation of a fairly standard, traditional recipe for dilled green beans. Rather than blanching fresh green beans and processing the jars, the slightly cool brine is poured over thinly sliced onion and Truitt Bros. whole Blue Lake green beans in quart jars.

These beans are great in everything, but you’ll probably end up eating them straight from the jar because they’re just plain delicious. The longer they sit, the better they seem to taste. (If you do a nice job of standing the beans up in four-pint jars before covering them with the brine, no one will know you didn’t sweat over a canner in the hot summer months.) 4 cups Truitt Bros. whole Blue Lake green beans
1 large onion, thinly sliced
2 cloves garlic, thinly sliced
2/3 cup sugar
1 1?2 cups white vinegar
1 1?2 cups water
1 teaspoon black peppercorns
1 teaspoon red pepper flakes
2 teaspoons dried dill, or 4 sprigs fresh dill
2 teaspoons salt

Alternate the beans and onion slices in two one-quart jars. If you are using fresh dill, put two sprigs in each jar.

Combine the garlic, sugar, vinegar, water, spices and salt. Bring to a boil and allow to stand until the mixture is at room temperature. Pour over the beans and onions. Refrigerate 12 hours or longer.

I make my Nana's famous green bean salad.

Fresh green beans( boiled ) fresh tomato's, garlic, salt, pepper, and vinegar, mix together and chill.

It's my favorite summer salad.

Steam them. In fry pan put 1oz.oil,saute 1 small onion,add 2 teaspoon fresh cilantro,add green beans and salt,pepper to taste. Can be eaten hot,warm or cold.

Boil till barley tender then top with lemon and parmesan cheese!

Cook them in a pot with bacon and a little water, not boiling them, and throw in some new red skinned potatoes. Season with a little garlic pepper seasoning.

I steam them and put pepper and vinegar on them while they are steaming, and sometimes I add a little bit of garlic. it's really good.

eat them

Add cooked green beans to fried bacon, onion, and boiled red potatoes

Fry bacon pieces, and then quick-saute the green beans in the bacon drippings. Serve with fresh chopped tomatoes on top ...... (don't over cook the beans)

saute in olive oil and fresh garlic yummers!!

Blanche them until almost done. brown up bacon pieces. Add minced garlic. Toss with beans. Top with a little salt, pepper, and Parmesan cheese.

My sister made these for me for my birthday dinner. LOVE them. Wasn't even what I asked her to cook for me either. It was just part of the surprise.
