How do I know my duck is done?!


Question: I just cooked duck- it has gone really crispy. I halved it and spread both halves over a tray in the oven- it's been in for over an hour. However, when I got it out and cut into it it released dark red blood- does this mean it is not done? Is it like chicken and do I have to wait till the juices run clear? Help please!

stick a thin knife into the duck and see if blood comes out -if not then duck is cooked otherwise cook it some more.
