Question: I have 6 largish chicken breasts and am going to have broccoli and carrots and new pots with it. What is a tastey way to cook chicken - need for tomorrow night. Cheers.

There are so many ways to fit it.
BBQ- you can do this either on grill or oven or crock pot.It easy put chick in pot and fav bbq sauce and turn on let cook on low all day ahahahahahah so tender,and fall apart.
Grill- This is also easy clean chick,season to taste put on grill and slow cook but watch real close this will burn.
OVEN-this is best for clean up get pan and place chick in season to taste and cover with tin foil or lid to pan. let cook.
Just before you eat take cover off for about 30 mins and let brown but not real dark since this will dry out. you can also add bbq.
You could also fry it.

you could marinate them in italian dressing, this makes them flavorfull and very juicy and yummy, just marinate them overnight, then either bake them or grill them,,bbq sauce is good to,,

Well, my fave I made last night, is boneless skinless chicken breasts and dip in egg and then I mix Panko bread crumbs (or you can use reg. breadcrumbs) Panko are much crunchier. MIx the breadcrumbs with a packet of dry ranch dressing mix. I don't always use the whole pack.
Then brown in a skillet with some olive oil. If they are thick you can brown them and then put in the oven to finish cooking. They are my favorite!!

Easy Crunchy Baked Chicken

1 cut up chicken, skin removed
2 tablespoons margarine
1 1/2 cups oat bran cereal
3 tablespoons oat bran
1 tablespoon finely chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/2 cup lowfat yogurt
1 tablespoon spicy mustard
cilantro sprigs for garnish

In baking dish, place margarine and melt in 350F oven. In plastic bag, mix together oat bran cereal, oat bran, sage, salt and pepper; crush with rolling pin and place on wax paper. In small bowl, mix together yogurt and mustard; brush on chicken and roll chicken in oat bran mixture to coat well. Arrange chicken in baking dish with margarine and bake in oven for 1 hour. Garnish with cilantro. Makes 4 servings.

Chicken Parmesan: made just like veal Parmesan - only with the chicken. Most folks don't use strictly Parmesan cheese. They use provolone or Swiss cheese - even American or the cheese or cheeses of your choice.

Stuffed chicken breast - with brad stuffing.

Chicken Cordon Bleu - with baked ham and Swiss cheese.

Yes, that is my real last name!

2 1/2 cups diced cooked chicken breasts
1 10 oz. can cream of chicken soup, (no water added)
1 cup frozen chopped broccoli, thawed and drained
2 small plum tomatoes, chopped
1 small carrot, grated
1 tablespoon dijon mustard
2 cloves garlic, minced
1/4 tsp pepper
1 pkg. frozen puff pastry, thawed
1/4 cup grated Parmesan cheese

Mix the first 8 ingredients together and set aside.
Spray a 12 cup muffin tin with Pam.

Roll pastry out on a floured bread board in the shape of a 12X9 inch rectangle.

Cut pastry into 4 lengthwise strips 3 strips wide.

Press the pastry squares into muffin cups and spoon chicken mixture into the cups.

Sprinkle over with Parmesan cheese.

Bake at 375 degrees for 25-30 minutes or until golden brown.

This is a great dish and should be able to use your veggies up!

Shake breasts in bag with 1/4 cup oil & an envelope of Hidden Valley Ranch Dresssing Mix--lay in baking pan--bake @350 for 50-60 min.. Its easy & it tastes GREAT!!!
