Season with salt and pepper, place in a deep roasting pan, toss some carrot, onion and celery chunks, put beef on top of veggies, pour in enough water to go about half way up the beef, seal tightly with aluminum foil roast at 200- 225 for 4 hours that should be enough time at this point check to see how tender it is cook longer if needed. When cooked remove beef, put it on a plate or something to catch the juices cover with foil and let rest. Take the liquid and the veggies and put them in a blender or process to get a nice sauce.

Coat it in a little oil, put it in a baking pan and cook it at 190 for 3-4 hours. Cover it with a lid or foil to keep it moist.

You want a internal temperature of 150. Never trust your stove they all cook at different temperatures then someone elses. At 350 my over cooks at 340 but the gap can be as much as 50 degrees.
