Anyone have a really good salad recipe, other than lettuce and veg boring old boring?!


Question: Pasta Salad
One of my favorite cold pasta salad recipes.

This Italian pasta salad is packed with nutritious vegetables. It gets an extra boost of fiber from whole wheat pasta.

Pasta Salad
16 oz. whole wheat corkscrew pasta
1 red pepper, chopped
1 green pepper, chopped
1 medium red onion, chopped
1 pint cherry tomatoes, halved
1 cup chopped zucchini
1/4 cup sliced black olives
1/2 cup diced Mortadella (Italian bologna)
1 19 oz. can chickpeas (garbanzo beans), rinsed and drained
1/4 grated Parmesan cheese
8 oz. low-fat Italian salad dressing
Cook pasta according to package directions. Drain and toss with remaining ingredients.

Chicken ceasar salad, with real bacon bits, cheese, cucumber and croutons

My mum always would make this five spiced chicken and mandarin salad recipe for special occasions like christmas. It sounds a little odd having mandarin in a salad, but it is awesome. Check out the link for the recipe and photo.

Here is my favorite..........Apple cottage cheese salad.

Dump all ingredients into bowl.
1 carton cottage cheese
1 red delicious unpeeled apple , core and cut into small pieces
1/4 cup raisins
1/4 pecan pieces
2 tablespoons Miracle Whip salad dressing or less
Mix together and serve immediately or store in refrigerator.

What about trying a grilled salad . . . Its starting to warm up and getting closer to Spring time. Take a head of romaine lettuce, and sprinkle lightly with olive oil, salt and pepper. And grill to get light grillmarks on it. You could also have any type of meat if wanted along with it. (Add on grilled kabobs of fresh veggies to top salad)

Chinese Pasta Salad
8 ounces dry fettuccine pasta
2 tablespoons natural peanut butter
1/2 cup vegetable broth
2 tablespoons soy sauce
3 cloves garlic, minced
2 teaspoons crushed red pepper flakes
1 red bell pepper, chopped
2 green onions, chopped
1/2 cup chopped fresh cilantro


Cook pasta in a large pot of boiling water until al dente. Rinse and drain. Set aside.
In a large bowl, combine peanut butter, broth, soy sauce, garlic, and crushed red pepper. Mix well. Add pasta, sliced red pepper, scallions, and cilantro; toss to combine. Chill.

I'm gonna melt some cheese over bread,break it up and put it in the salad..=)

Not sure what else you already know...chicken,lemon juice,Philly cheese steak meat&swiss cheese(philly cheese steak sandwich salad!!lol)

I love using mixed greens (spring mix), diced chicken &/or ham, dried fruits (diced stuff in a bag), feta cheese, cukes, green onion, grape tomatoes, garbonzo beans ... topped with my own honey/orange/balsamic viniagrette

Honey/Orange/Balsamic Viniagrette

1tsp Honey
1oz Balsamic Vinegar
3oz Olive/Canola oil blend
1tbsp Orange juice
S+P

(with a wisk) Mix honey & balsamic vigorously;slowly add oil until an emulsion is formed. Add OJ and s+p to taste.

You'll love this one, no lettuce.

Easy Greek Salad

2 cups chopped cucumber
2 medium tomates, cut into chunks
1/2 cup coarsely chopped green peppers (or yellow, red)
1/2 cup thinly sliced red onions
1/2 cup crumbled Feta cheese
1/4 cup Kraft Greek with Feta and Oregano Dressing
1/2 tsp grated lemon peel (optional)

Toss all and serve immediately. Can be made up t 24 hrs. before serving if refrigerated.
This is a delicious salad.

Individual Taco Salads

3 c elbow macaroni
-uncooked
1 lb Lean ground beef
1 c Chunky picante salsa
1 c Taco sauce
1/2 Head iceberg lettuce;
-shredded
1 1/2 c Cheddar cheese; shredded
Tortilla chips
Dairy sour cream; (optional)

Instructions:
Cook pasta according to package directions; drain. Meanwhile, in medium
saucepan, brown meat; drain. Stir in salsa and taco sauce; blend well.
Simmer 5 minutes. Divide lettuce evenly among 6 plates; layer about 1 cup
hot pasta and 1/2 cup meat mixture over each serving. Sprinkle with cheddar
cheese; garnish with chips. Top with additional taco sauce; dollop with
sour cream, if desired.
