Take a skillet, use vegetable oil (enough to fill the bottom of the skillet), put on medium heat. Chopped up plantains, place in the skillet and fry. Season with garlic and salt and pepper. Cook till browned and crisp.

Preheat oil in a large, deep skillet over medium high heat.
Peel the plantains and cut them in half. Slice the halves lengthwise into thin pieces.
Fry the pieces until browned and tender. Drain excess oil on paper towels.
Fried Plantains
Ingredients:
oil
plantains, one per serving (plantains can be cooked while they are unripened and green)
salt or African Hot Sauce
Directions:
Peel and cut plantains, either into thin slices, or slice each plantain in half and cut each half lengthwise. Heat the oil in a pan or skillet on the stove top. Add plantains (in a single layer) and fry until golden. Serve with African Hot Sauce or salt as a snack, an appetizer, or a side dish. Can also be served sprinkled with sugar as a snack or dessert.

we call them Canoas in puerto Rico meaning canoe(i hope i spelled it right)
you will need one ripe plantain (sweet , yellow) per person
1lbs ground beef cooked with your desired seasoning we use sazon, sofrito salt or chicken bullion and tomato sauce.
1pck of Cheddar cheese
1slice of Swiss per platain
1pck of mozzarella

Cut the 2 ends of of each plantain
put in microwave 2 min for each platain (remember every micro is different pay attention when you see that the outside as shrinks enough to see 1/2 of the plantain is done .
take cut a line in the middle , peel and open the plantain sort of forming the canoe.
in the middle you are going to put the ground beef and cover it with all the cheese.
serve one per person i eat this with white rice. hope you like and enjoy
