CLEAN STREAMS! yes. absopositively. Don't eat them if they are down stream from your local sewage treatment plant or whatever. Just boil them up like crab. Look for "crawfish boil" recipes out there, and there are a million of them. In New Orleans, they sell them by the pound, with boiled potatoes and corn on the cob.
There is a way to purge them right before you cook them, by putting them in salt water and that makes them pooo out all the bad stuff in their system. But if they are heavily contaminated with stuff like lead, or mercury, nothing you can do about it.
Contact your local wildlife and fisheries department to find out if your source is contaminated for fresh water crustaceans.
As long as the stream is clean, go for it.Boil then with some Cajun spices.
