It turned out OK I guess.
I just thought it was supposed to taste sweet, not like normal bread.

Hash Browns - Sweet Potato
(4 servings)
1 pound sweet potatoes (roughly 3 medium spuds) -- peeled and grated
1/4 pound diced bacon
1/2 cup chopped onions
1/2 tablespoon chopped garlic
Salt and pepper to taste
In a large skillet, fry the bacon until crispy, about 8 minutes.
In the same pan, add the onions. Season with salt and pepper. Saute the onions until soft, about 2 minutes.
Then add the garlic and sweet potatoes. Saute for about 10 to 15 minutes. Remove from the heat and serve warm.
This is great for dinner as well as breakfast -- a nice twist on regular browns.

Grate as much potatos as you need with a regular cheese grater, press it to gether (patties if you want) and fry with salt and pepper. Brown completely on one side and then brown the other. Oh and fry it in vegetable oil. You could also buy the potatos already grated in the frozen food section but I dont think its as good as doing it from scratch. As far your french toast goes, try adding vanilla and powdered sugar to your egg mix. Also put powdered sugar on your french toast afterwards.
I peel and shred the potatoes, then par-boil them. I then squeeze all the water out with a clean towel and put them in a preheated skillet that has melted butter. They taste much better if they're par-boiled, in my opinion.
With the french toast add a little vanilla extract and some cinnamon ...
For hash browns I like to add a little onion garlic and peppers (red & green) and some olive oil (maybe 2 tablespoons - sorry I don't measure just pour a little in the skillet) And just cook on med. I also do this with left over potatoes and the above (it just cooks a little faster and it's a way to use leftovers. I add ground pepper too (rarely use salt but that's up to you to decide) happy cooking to you
OK, I am going to give you my recipe that is the best.
First you need to get your potatoes, I would suggest that you just go to the store and get some Ore-Idda raw pre-cut hash browns.
If you are a purist (like me) get a couple of baking potatoes and grate them over a coarse cheese grater. Then you need to rinse and let soak the gratings in cold salted water until you get ready to cook them (overnight preferably). Don't worry about peeling the taters.
Ok here is the important part, get 1 pound of high quality bacon, i suggest Wright's (it is so choice) cook the bacon in a pan until it is brown. Pull the bacon off. Don't wash the pan and don't turn off the heat, immediately throw the potatoes in the pan with the delicious bacon fat and crumbs. Do not disturb the potatoes at all. Let them cook in the fat on med-high heat until they turn brown on the underside and then you can turn them over. If you disturb the potatoes before this they will stick and it will just turn into a big mess.

The best hash browns come from previously cooked potatoes. Either bake or microwave the potato, refrigerate until cold, then dice or shred it-your call. I like to add some garlic powder, fresh diced onion, paprika and fresh diced green or red pepper. You don't have to add anything but salt and pepper to flavor them, though. To brown, put about 2 T olive oil into a skillet, heat over med. heat until the oil sizzles when a drop of water is dropped on the grease, then add the potatoes. (If you need to add more oil add another 2 T at a time to keep the potatoes from sticking to your skillet.) Turn when the edges are golden. I also will top with a slice of cheese or sprinkle with cheddar cheese shreds. MMM
For great french toast: 1 egg beaten. 1/4 t cinnamon, 1 c milk, 1/4 t vanilla, and 1 T sugar. Mix well with a fork. Heat and spray oil on your griddle or skillet. Dip bread slices into the milk mix and place on hot griddle or skillet. When the top of the bread starts to look like all the milk is absorbed flip-you can check for brownness by lifting a corner of the bread, turn when you like the color. This makes about 6 slices of regular sliced bread-depending on how long you dip your bread in the milk mix. Top with your favorite syrup, butter, powdered sugar, fruit or other topping. My husband likes this recipe.
