The trick to good potato salad is to cut up the raw potato into cubes and cook them until they are just aldente (appx. 7 minutes), drain the water, BUT DO NOT RUN UNDER COLD WATER this stops the cooking. We don't want that. Let the potatoes cool down naturally, by the time that are cool, the potatoes should be perfectly cooked, done but firm.

Yes. You must boil the potatoes until tender--cut them in chunks first, though. If you want, you can peel the skin off.
When I make it, I like to use those little red potatoes so it just looks nice with the skin on. And it tastes better that way.

I peel and cut my potatoes into one inch pieces. Then I cook them until they are soft enough to bite through, but still hard enough to keep their shape when I stir. About 6-8 minutes [from boiling point] on med. And I ALWAYS make more than I think I need-BECAUSE I always need more!!!!

if you boil with the skin on it will give more flavor to your potato salad. you can peel them after cooking.

Boil the whole potatoes with the skins on for 20-30 minutes depending on the size of the potato. Check with a fork. Peel when cool.

Use a fork to test if potatoes are soft enough.
