Potato salad help.?!


Question: ok i have been given the job of making the potato salad for a buffet tomorow.the basic thing is potatoes and mayo.anyother suggestions how i can make it really nice and if i can add anything else to make it my own.im gonna put chives into it but they are dried.is that ok.

Here's a recipe for you. I'd put the dried chives as garnish. Have fun!!

Ingredients
8-12 hard-boiled eggs(depending on how much you like eggs)
8-10 medium potatoes
1/2 cup sour cream
1 cup mayonnaise
1/4 cup mustard(yellow, prepared)
1 stalk celery(diced small)
1/4 cup onions(diced small)
1/4 cup green onions(green tips cut into small pieces like you would put on a baked potato)
1 tablespoon sugar
8 pieces cooked bacon(crumbled into small pieces)
1/8 cup cilantro(diced up into small pieces)
pepper
garlic salt
seasoning salt

Directions

peel and boil the potatoes.

Boil the eggs (so eggs are hardboiled).

put both potatoes and eggs in a separate pot and put them on med heat for about an hour.

Just test the potatoes.

You don't want them to soft, but the fork should be able to pierce them easily.

While waiting for the potatoes and eggs to cook, prepare other ingredients.

cook the bacon, cut up onion and green onion, celery, cilantro.

You can use the bacon pieces and so forth that you get from the grocery store, but I must say that the taste of fresh bacon really adds to the taste.

Once the potatoes and eggs are done, slice the potatoes into bite sized pieces and peel the eggs and cut into pieces as well.

Then add all the other ingredients and stir together.

The salts and pepper is to taste, but what I do is to take the salts and sprinkle them onto the mixture (back and forth) and just sprinkle the pepper on the same way.

Chives sound nice, you could also add carrots

Dilly Potato Salad
INGREDIENTS
2 pounds red potatoes, diced
6 hard-cooked eggs, chopped
1 cup nonfat plain yogurt
3 tablespoons fat-free mayonnaise
1/4 cup chopped green onions
1 teaspoon prepared Dijon-style mustard
1 teaspoon dried dill weed
1 teaspoon garlic powder

Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and set aside to cool.
In a large bowl, combine the potatoes and chopped eggs.
Mix together the yogurt, mayonnaise, green onions, mustard, dill weed and garlic powder. Pour dressing over potatoes and eggs; toss and chill until ready to serve.

I find your idea of chives great, also eggs are good too.
Celery, but I wouldn't do carrots, they are hard for some people to chew.

Dried chives are a No-No. Fresh,sure or why not try scissoring in some spring onions (scallions) nice and fine. A little made mustard in the mayo is good and use a goodly portion of black pepper.

I have a good recipe that I think is German Potato Salad:

3 T Mayo
3 T Sugar
3 T Vinegar
3 T Milk
1 T Mustard
Salt and Pepper

Start with the sugar, as it is dry, then the vinegar, then milk. Add mayo and mustard. Stir until smooth and creamy. Pour over the potatoes, add salt and pepper, and mix until creamy. This recipe can also be used for cole slaw.

I also add hard-boiled eggs to this, and when I make other kinds of potato salad, and that adds flavor.

Another idea for what to put in potato salad (not with the recipe above, just another idea), is Ranch Dressing.

What about making it a southwest potato salad. Just add some taco seasoning to the mayo mix and a little sour cream, sliced black olives, chopped onion, chopped green peppers, chopped fresh tomatoes (seed and juice them first). Garnish with chopped fresh avocado (dipped in lime juice to help prevent browning and cilantro. You can also add chopped jalapenos or diced green chiles, drained, if you like it hot and spicy.

I think I would rather have fresh minced green onion in it as opposed to dried. The flavor and color will be better. A little mustard is nice, chopped dill pickles, chopped celery, and chopped hard boiled eggs :)

well I use fresh cut up tomatoes and celery and also celery seed . it adds that special zip to it . good luck .

try and get fresh chives and add chopped up crispy bacon too

Potatoes - hard boiled eggs mashed , little pickled silver skin onions chopped, small gerkins chopped and a red onion chopped, mix it all in with mayo its delightful

Hi - dried herbs are fine, though fresh are best.

Fresh ground black pepper adds zing, as does a dash of Tabasco or a small tsp of grainy mustard.

My best ones are made using small new potatoes and keeping the skin on, but that's personal choice.

1st of all pot salad for a buffet....are you going to have some way of keeping the pot salad cold? anything w/ mayo will need to stay chilled, can only stay out for 1hour or so...Mustard pot salad is good, so is pasta salad made w/ it dressing.
Ing for pot salad: Diced onions, celery, Bacon, boil eggs,green onions, olives..

hmm.. seeing that potato salad can be made in various ways.. i think out of these ingredients choose what you like most their all great together...
carrots, peas, chopped eggs, s&p, mustard, minced green or red onions, sweet pickle relish, and a little cayenne pepper!
